MARVELOUS MEATBALLS

Moist, Juicy, Tender yet almost Creamy bites of Yumminess. So many things can be done with this meatball, anyway you choose, it's sure to be a hit! (ideas listed in instructions) and BONUS...they freeze well for up to 3 months! Enjoy! :o)

Steps:

  • 1. Preheat oven to 400. Line a 11x17 pan (approx) with foil, set aside. In a small bowl, add bread and pour milk over. Allow to stand 5 minutes. (Bread is formulated for 3 average slices of white bread, if using something different you may need more or less)
  • 2. Squeeze excess milk from bread, crumble into a large bowl, discarding milk, add in remaining ingredients. Mix well. Your hands will work the best. :o) Shape into 1 1/2" balls. (a large cookie scoop works wonderfully) Place onto prepared pan, leave at least 1/2" between each meatball. Bake for 20 minutes. Enjoy!
  • 3. As I said in the note above...These can be used so many ways. - with your favorite marina sauce on a garlic toasted hoagie roll with provolone or mozzarella - with your favorite spaghetti/marina sauce over pasta OR on a small bun with mozzarella as a slider. - with a home made sweet and sour sauce over rice or egg noodles - with a rich beef gravy over mashed potatoes - or alone with caramelized onion and mushrooms over top (MY Favorite)

3 slice bread, hard crusts removed
1/2 c milk
1 lb ground beef
1 pkg 16-19 oz of sweet italian sausages, casings removed, if using links
2 eggs
1 medium onion, small dice
2-3 clove garlic, minced
1/2 c parmesan cheese, grated stuff in a can/jar
1/2 tsp sea salt
1/2 tsp fresh ground black pepper

MARVELOUS MONGOLIAN MEATBALLS

My meatball recipe inspired by Chef John's Mongolian Pork Chops is absolutely delicious. A wonderful recipe for a party. Serve them as an appetizer with toothpicks, and they will disappear before your eyes. They can also make a meal sandwiched in a hero or over a bed of pasta.

Marvelous Mongolian Meatballs image

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Whisk hoisin sauce, 4 cloves garlic, red wine vinegar, soy sauce, grated ginger, rice vinegar, sesame oil, sugar, hot sauce, white pepper, and black pepper together in a large bowl.
  • Mix ground beef, ground lamb, cabbage, yellow onion, panko, carrot, ground ginger, green onion, 6 cloves chopped garlic, garlic salt, black pepper, and 2 tablespoons of the hoisin sauce mixture together in a separate bowl; shape into meatballs and arrange on a jelly roll pan.
  • Bake in preheated oven until no longer pink in the middle, about 25 minutes. Shake pan to turn meatballs, switch oven to Broil, and cook under the broiler until browned, about 10 minutes more. Set aside to cool.
  • Transfer warm meatballs to slow cooker and pour hoisin sauce mixture over the meatballs.
  • Cook on Low, stirring intermittently, for 2 to 4 hours.

Steps:

  • KIDS the writing in bold is for you. GROWN-UPS the rest is for you. Squeeze some sausages. Get your child to squeeze all the sausagemeat out of the skins into a large bowl. They can hold the sausages or do it by squashing them on a board.
  • Get grating. Get your child to coarsely grate the onion and finely grate the carrot. If the onion starts to hurt their eyes, get them to wear goggles, which is good fun. Grating can take a bit of strength, so you may need to help. Tip these vegetables in with the sausages. While you have the grater out, grate the Parmesan, other vegetables and garlic for the sauce, and set aside.
  • Make a marvellous mix. Next, get your child to add all the other meatball ingredients one by one, except the olive oil, into the bowl and season with black pepper.
  • Squish everything together. Get the child to squish everything together through their hands until completely mixed. Keep an eye on younger children to make sure that they don't taste any of the raw mix.
  • Roll meatballs. Children as young as three can now roll the meatball mix into walnut-sized balls, then place them on a board or tray. This mix should make 40 balls - counting these is great way to help teach older children basic division. Cover the meatballs with cling film and have a little tidy up.
  • Prepare the red peppers. Firstly, peel the peppers with a vegetable peeler, cut off the tops and bottoms and remove the seeds. Cut the peppers in half and children from the age of four can cut the peppers into strips.
  • Make the sauce. A grown-up will need to help here. Heat the oil in a large saucepan. Add the vegetables and garlic and cook for 5 mins. Stir in the tomato purée, sugar and vinegar, leave for 1 min then tip in the tomatoes and simmer for 5 mins. Get the child to help blitz the sauce with a hand blender. Gently simmer the sauce while you cook the meatballs.
  • Cook the meatballs. Brown the meatballs in the olive oil on all sides then pop them into the sauce, working in batches if necessary. Simmer the meatballs in the sauce for 15 mins, gently stirring until they are cooked through. It's ready to eat now or cool and freeze in suitable batches for up to 6 months. Serve with spaghetti, some basil and extra Parmesan, if you like.

Steps:

  • Place bread in a bowl and cover with milk. In another bowl, mix veal and pork. Add onion, garlic, lemon zest, Parmigiano-Reggiano, and parsley. Add salt and pepper. Mash bread mixture to form a paste and add to meat mixture. Mix together, adding egg, and combine well. Cover with plastic wrap and chill for 1 hour.
  • Preheat oven to 350 degrees. Divide mixture in half and form into two equal balls. Heat oil in a large ovenproof skillet over medium heat. Saute meatballs until brown, a few minutes on each side. Place in oven to finish cooking, 25 to 30 minutes. Serve immediately.

This is the best spaghetti sauce and meatballs I have ever made. And super easy too. . .took me about 15 minutes of prep work! It's a thick sauce and is a crowd pleaser. Perfect over noodles or, better yet, to make a meatball sandwich!

Slow Cooker (Crock Pot) Spaghetti Sauce With Marvelous Meatballs image

Steps:

  • Combine first 8 ingredients (stuffing down to onion flakes).
  • Shape into 1 inch balls.
  • Place in bottom of slow cooker.
  • Top with mushrooms and peppers.
  • Cover with Spaghetti sauce and tomato sauce.
  • DO NOT stir, just shake the pot a bit to get the sauce down toward the bottom.
  • Cook on low for 5-6 hours, but NO MORE. The meatballs will really start to fall apart if they are overcooked.
  • Stir after about 3 hours, then stir once per hour if you can.
  • Serve over noodles or make into meatball sandwiches!

THE BEST VEGETARIAN MEATBALLS EVER!

Seriously. I've made these twice within the span of about 10 days. My omnivore bf LOVED these too. The fennel really gives them that authentic italian meatball flavor, so don't omit. Served these with a cranberry glaze on them (Recipe #107450), mashed sweet potatoes, and some kale. Parmesan cheese occasionally contains rennet, so omit if you're a strict vegetarian. Could even keep these warm in a crockpot/slowcooker with the cranberry glaze on top for a fun party/finger food.

Steps:

  • Preheat oven to 350 degrees fahrenheit.
  • Thoroughly defrost veggie crumbles in skillet with a little cooking oil spray.
  • Remove from heat and combine all ingredients in a big bowl.
