This recipe is my beautiful Aunt Mary's. She is no longer with us but remember how proud she was of her special pineapple drop cookies. Aunt Mary's Pineapple Drop Cookies image

Steps:

  • 1. preheat your oven at 350 degrees In a large mixing bowl cream your butter, brown and white sugar. There is no need for a mixer on any part of this recipe.
  • 2. add your eggs, pineapple and vanilla.
  • 3. In another mixing bowl, blend your flour, soda, baking powder and salt. Gradually add the dry ingredients to the wet. Fold in your nuts.
  • 4. Drop by spoonfuls on a lined cookie sheet with parchment paper. Bake for 12 to 15 minutes or until they start to brown.
  • 5. Let cool on a cooling rack. Frost with pineapple butter cream frosting
  • 6. Make your frosting
  • 7. After your cookies are cooled frost a little or a lot! These cookies stay soft and are absolutely heavenly. The amount you get depends on if you want them big or tiny. "Enjoy"

1 c margerine (her recipe says "oleo" lol)
1 c brown sugar
1 c white sugar
2 large eggs
1 c 8oz can crushed pineapple / do not drain (reserve two tablespoons for frosting with both liquid and pineapple)
1 tsp vanilla extract
4 c all purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 c chopped walnuts

BETTE'S PINEAPPLE COOKIES

This family recipe has been with us for so long that we're not sure where it came from, but it is loved by all! A wonderful soft, buttery sweet cookie that melts in your mouth with the crunch of crushed pineapple and the softness of a cake. Absolutely WONDERFUL just out of the oven! You will want to make lots!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sift flour, baking soda, and salt together in a bowl.
  • Beat sugar, crushed pineapple, shortening, eggs, and lemon extract together in a bowl until thoroughly mixed. Add flour mixture to pineapple mixture; stir until just combined. Drop dough by teaspoonfuls 2 inches apart onto baking sheets.
  • Bake in batches in the preheated oven until tops are lightly browned, 12 to 15 minutes per batch. Transfer to wire racks to cool.

I saw this recipe on the web and thought it looked so good I had to try it immediately - so I did! The results were wonderful. Even my fiance (who swears he doesn't like pineapple) thought they were great. I found a couple of similar recipes on zaar, but not one exactly like this.

  • Preheat oven to 350.
  • Cream shortening and sugars together.
  • Add egg and mix well.
  • Add dry ingredients and mix well Add drained pineapple and mix well.
  • Add nuts and flavoring, mix well (yes, again).
  • Drop by spoonful onto greased baking sheet.
  • Bake for 15-20 minutes.

MARY JANE'S DELICIOUS COOKIES

This family recipe was almost lost. Grandma gave this recipe to Mary S. after the dementia set in. Sarah was at Mary's after Grandma's funeral getting a recipe. This recipe fell out of Mary's box and Sarah picked it up, recognizing her mother's handwriting. Mary pled with Sarah to let her keep it saying that Grandma had given it to her. Sarah made her a copy and the original recipe is in Sarah's recipe box and now here.

  • Drain pineapple, reserving 3 tablespoons juice. Set pineapple aside; set juice aside for frosting. In a large bowl, cream shortening and brown sugar until light and fluffy. Beat in egg. Add pineapple and vanilla; mix well. Combine the flour, baking powder, baking soda and salt; stir into the creamed mixture. , Drop by tablespoonfuls 2 in. apart onto greased baking sheets.
