MASHED CANDIED YAMS
I had these at an appreciation dinner at Treasure Island Casino in Minnesota and later asked the banquet manager to give me the recipe. These were delicious and very easy to make. They taste like candy and melt in your mouth . If you like you can thicken them up with instant mashed potatos, this gives them a bit smoother texture and enables you to use a pastry gun to plate the yams for a fancier presentaion.

Steps:
- Peel and halve yams then boil until cooked through and drain.
- Mash yams and cover to keep warm while cooking the rest.
- Combine all ingredients except the yams and eggs in a seperate pan and cook on the stove top over medium high to high heat until it comes to a slow boil and simmer for a just couple more minutes.
- Add mashed yams and and eggs and stir until combined.
- Thicken with instant mased potatos if desired and serve.
MASHED CANDIED YAMS
Although I will always fondly remember my moms yams without marshmallows, I really wanted to try the candied version. After much trial and error, and mashing up a few of my favorite recipes, I created these. I've been told by friends and family that don't even like yams that I must make these every thanksgiving.

Steps:
- Preheat oven to 350 degrees.
- Roast drained yams on a cookie sheet for 20 minutes until they are mostly dry and very lightly browned.
- Mash yams, butter, salt, nutmeg and cinnamon together until well combined.
- Blend the eggs and cream into yams. Start with 1/4 cup, then increase if needed, depending on how dry your yams are.
- Pour into buttered 9x13 baking dish and cover with foil.
- (Can be refrigerated or frozen at this point. Just defrost in refrigerator, then add approximately 15 minutes additional time to bake.).
- Bake at 350 degrees for 30 minutes, until heated through.
- Remove foil, top with marshmallows and return to oven for 10 minutes more, or until marshmallows are golden brown and puffed.
- Enjoy!

CANDIED SWEET MASHED POTATOES
With Thanksgiving around the corner, thought you might like a new sweet potato recipe to try. A splash of sweet sherry in them gives them wonderful flavor! No need to wait for a holiday though, try them for dinner tonight!

Steps:
- Heat enough salted water to cover sweet potatoes (1/2 teaspoons salt to 1 cup water).
- Add potatoes and cover.
- Heat to boiling; reduce heat.
- Boil until tender, approximately 30 to 35 minutes; drain.
- Slip off skins and mash potatoes.
- Cover to keep warm.
- Mix remaining ingredients in a 10 inch skillet.
- Over medium heat, cook, stirring constantly, until smooth and bubbly.
- Pour mixture over mashed sweet potatoes and stir gently until heated through.
- Note; If you prefer, you can slice the potatoes instead of mashing them after you have removed the skins.
- Add to skillet with sugar mixture and stir gently until potatoes are glazed.

CANDIED MASHED SWEET POTATOES
This recipe was a result of several recipes I combined to come up with what I was looking for. I wanted a sweet potatoes casserole (not potatoes chunks), so I combined a few recipes and add a few steps.

Steps:
- Wrap sweet potatoes in foil and bake on 350 until done (approx. 1 hr).
- Allow sweet potatoes to cool in foil, this will loosen the skin so you can peel them by hand.
- Peel skin off potatoes.
- In a sauce pan combine - Butter, brown sugar, maple syrup, salt, cinnamon & cayenne pepper. Melt all ingredients.
- In a mixing bowl combine potatoes and cream.
- With a mixer whip potatoes and cream (I used a stand mixer).
- once the potatoes and cream have come together to the consistency of mashed potatoes, fold in the mixture from the sauce pan.
- Pour mixture into a baking dish.
- Top with marshmallows (optional).
- Bake on 350 for 45 minute.
MASHED CANDIED SWEETS
This is easy to make and everyone loves marshmallows on top.

- 1. Cut potatoes into 1-inch pieces; cook in boiling salted water until very tender, about 15 minutes. Drain well and remove to a large bowl. While potatoes are hot, mash with the remaining ingredients (except marshmallows). 2. To serve, spoon the potatoes into an oven-to-table dish and dot with marshmallows, if desired. Reheat in a 350°F oven until warmed through, about 15 to 20 minutes.
