- Place potatoes in a 6-qt. stockpot; add water to cover. Bring to a boil. Reduce heat; simmer, uncovered, until potatoes are tender, 10-15 minutes., Drain; return to pot. Mash potatoes, gradually adding sour cream, milk and garlic. Stir in remaining ingredients.

Steps:
- In a large skillet, heat 1 tablespoon olive oil over medium-low heat. Add onions, season with coarse salt. Cook, stirring frequently, until onions are caramelized, 35 to 40 minutes.
- In a medium saucepan, combine potatoes, garlic, and enough water to cover by 1 inch. Bring to a boil; add salt. Cover; reduce heat, and simmer until tender, 15 to 20 minutes. Drain, reserving 1 cup liquid.
- Return potatoes and garlic to pan. Add remaining 2 tablespoons olive oil; season with salt. Mash until smooth, adding reserved liquid as needed. Stir in onions, and serve immediately.

I'm crazy about caramelized onions & who doesn't like mashed potatoes. This recipe was given to me by a dear friend who knew my obsession with caramelized onions.

Steps:
- 1. heat oil on high heat; reduce to medium
- 2. cook onions with sugar & salt, stirring often until onions brown...about 20 to 25 mins. Add a few tbsp. of water as the onions cook so as to not burn or stick to pan.
- 3. Fill a medium pot 3/4 full of cold water, add potatoes & parsnips. bring to a boil over high heat, reduce to a simmer & continue cooking potatoes & parsnips for 20 to 25 mins till they become fork tender, then drain.
- 4. Beat 1/4 of potato-parsnip mixture and 3 oz broth in a mixing bowl with an electric mixer on medium speed until smooth.
- 5. Repeat, alternating between potato-parsnip mixture and broth, until you've incorporated all.
- 6. Fold in onions, cheese and thyme, and serve.
CARAMELIZED-ONION MASHED POTATOES

- Boil whole russet potatoes in their skins until they're easily pierced with a knife; let cool slightly before peeling. While the potatoes are boiling, saute sliced white onions in olive oil or butter over low heat until soft and deeply caramelized. Mash the potatoes with milk or cream, butter, and salt and pepper to taste. Stir the caramelized onions into the potatoes just before serving.

- Heat oil in a large nonstick skillet over medium heat; add onions and 1/2 teaspoon salt. Cook and stir for 15 minutes or until moisture has evaporated and onions are completely wilted. - Place the potatoes in a large pot of cold, salted water. Bring to a boil and cook until fork tender.
- In the meantime, melt 2 tablespoons of butter and the olive oil in a large sauté pan over medium heat. Add onions, 1/4 teaspoon salt and the sugar and stir frequently, until onions are golden brown and caramelized, about 30-40 minutes. If the onions get too dry, add a small amount of water to deglaze the pan. Set aside.
- While the potatoes and onions are cooking, heat the half and half, garlic, bay leaf, and remaining 2 tablespoons of butter in a small saucepan over medium heat.
- When done, drain the potatoes and return them to the hot, dry pot. Stir them over low heat for 2 minutes until they are dry. Pass the potatoes through a ricer into a large bowl.
- Discard the garlic and bay leaf from cream. Gently stir in the hot cream a little at a time until the potatoes are smooth and creamy. You may not need to use all of the liquid.
- Set aside a small amount of the caramelized onions for garnish and stir the remaining onions into the mashed potatoes. Crumble the goat cheese into the potatoes and stir to combine well. Season with salt and black pepper to taste.
- Spoon the mashed potatoes into a serving bowl and garnish with the remaining caramelized onions. Serve hot.

- Peel potatoes; cut into 2-inch pieces. Bring potatoes, 2 tsp. salt, and water to cover to a boil in a large Dutch oven over medium-high heat; boil 20 minutes or until tender. Drain. Return potatoes to Dutch oven, reduce heat to low, and cook, stirring occasionally, 3 to 5 minutes or until potatoes are dry.
- Mash potatoes with a potato masher to desired consistency. Stir in warm buttermilk, warm milk, melted butter, pepper, and 1 tsp. salt, stirring just until blended.

- To prepare the caramelized onions, place a large skillet over medium heat, add the oil. Add the sliced onions to the skillet and cook the onions until they turn caramel in color, about 10-15 minutes.
- Cut potatoes into equal pieces and place in a stockpot. Cover potatoes with water and place the pot over medium heat. Bring the water to a boil. Cook potatoes for 8-10 minutes or until the potatoes are fork-tender. Drain. Return potatoes to the pot and add the butter and the half and half. Mash potatoes with a potato masher until smooth.
- Add 1/2 cup of the grated cheese to the potatoes and stir until incorporated. Add rosemary and half of the onions.
- Place potatoes in an ovenproof baking dish and top with the remaining onions. Sprinkle the remaining 1/4 cup of cheese over the onions and place under the broiler until the cheese has melted.
