THE BEST M&M COOKIES
We took our favorite chocolate chip cookie recipe and increased the brown sugar to make these cookies extra moist and chewy. Then we super-sized them -- the better to get in more of our favorite candy-coated chocolates. Save some extra candy for topping each cookie before baking. The result, cookies that look just as good as they taste!

Steps:
- Sift the flour, baking powder, baking soda and salt into a large bowl.
- Beat the butter, brown sugar and granulated sugar in a bowl with a mixer on medium-high speed until pale and fluffy, about 4 minutes. Beat in the eggs one at a time until smooth, then beat in the vanilla. Reduce the mixer speed to low. Add the flour mixture and beat until combined. Reserve 1/4 cup of the chocolates, then stir in the remaining 1 3/4 cups of chocolates by hand. Press plastic wrap directly onto the surface of the dough and refrigerate until chilled through, about 1 hour.
- Arrange the racks in the upper and lower third of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
- Roll the dough into 24 balls, each about 3 tablespoons (alternatively, use a #20 large cookie scoop). Place 6 dough balls on each of the prepared baking sheets; stud the top of each dough ball with some of the reserved chocolates. Bake 2 trays at a time until the cookies are golden around the edges but still soft in the middle, rotating the trays halfway through, 15 to 18 minutes. Remove from the oven and let cool 10 minutes on the baking sheets, then transfer to wire racks to cool completely. Repeat with the remaining dough and chocolates.
BUTTER COOKIES II
This is a simple butter cookie that can be used in a cookie press, as a drop cookie or made into a roll and sliced. There is no mystery cookie for a cookie press...any stiff butter type can be used. Just be sure to chill it thoroughly so it keeps its shape while baking.

- In a large bowl, cream together the butter and white sugar until light and fluffy. Beat in the egg, then stir in the vanilla. Combine the flour and salt; stir into the sugar mixture. Cover dough, and chill for at least one hour. Chill cookie sheets.
- Preheat oven to 400 degrees F (200 degrees C). Press dough out onto ungreased, chilled cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven, or until lightly golden at the edges. Remove from cookie sheets to cool on wire racks.

MATHER HIGH SCHOOL BUTTER COOKIES
Steps:
- Cream butter, add sugar and beat Add flour a little at a time, then add vanilla (batter will be very thick) Make 9 big balls of cookie dough per ungreased cookie sheet (4 cookie sheets=36 cookies) Place extra sugar on plate for topping Press palm of hand on plate of sugar and then press down to flatten each ball of dough. With fingers spread to form ridges- each cookie should be flattened to approximately 3 inches wide and 1/4 inch thick. Bake 15 minutes or until lightly browned in a preheated 350 degree oven. Do not over bake!

- Heat the oven to 200C/180C fan/gas 6. Beat the salted butter, vanilla and sugar together with an electric whisk until pale and fluffy. Sift over the flour and beat again until just combined. Spoon the dough into a piping bag fitted with a medium star nozzle.
- Pipe the dough in small 5cm swirls on one large or two smaller baking trays lined with baking parchment, spacing them apart to allow for them to spread. Bake for 15-20 mins until pale golden.

SENN HIGH SCHOOL CHICAGO BUTTER COOKIES
This is the actual recipe used in the Chicago public schools, my Mom was the manager in the cafeteria for many years. This recipe was also published in a Chicago newspaper as one of the favorites. The cookie has a wonderful butter flavor and very delicate texture. Have one with a little carton of milk and you will feel young again. Enjoy!

Steps:
- Cream butter with mixer untill light and fuffy.
- Add sugar and salt and beat until no longer grainy.
- Gradually add flour a little at a time, beating at low speed untill dough forms.
- Mix in vanilla.
- Form dough into balls, one heaping tablespoon = 1 ball.
- Place balls on ungreased cookie sheet spaced widely- about 9 per sheet.
- Put 1/4 cup of sugar on saucer. Press first 3 fingers into sugar, then press down on ball to flatten to a 3 inch circle wide and 1/4 to 1/2 inch thick.
- Bake in preheated 350 degree oven 12-15 minutes, until faintly browned around the egdes.
- Gently remove cookies from sheet with a spatula, cool completely on wire racks.
CHICAGO PUBLIC SCHOOL CAFETERIA BUTTER COOKIES
I used to love the butter cookies they sold in my high school cafeteria. I've been looking for the recipe and this comes very close (if my poor old memory serves me right). These might be a little more tender than the CPS butter cookies but they're close enough for me!
