ANTIPASTO PASTA SALAD
A delicious pasta, meat and cheese combination with a homemade dressing. It serves a crowd and is great for a picnic.

Steps:
- Cook the pasta in a large pot of salted boiling water until al dente. Drain, and cool under cold water.
- In a large bowl, combine the pasta, salami, pepperoni, Asiago cheese, black olives, red bell pepper, green bell pepper and tomatoes. Stir in the envelope of dressing mix. Cover, and refrigerate for at least one hour.
- To prepare the dressing, whisk together the olive oil, balsamic vinegar, oregano, parsley, Parmesan cheese, salt and pepper. Just before serving, pour dressing over the salad, and mix well.

MEAT AND CHEESE PASTA SALAD
This is a very tasty pasta salad. It can be used as a main meal or a side dish. My family loved it I hope yours does to.

Steps:
- Cook rainbow rotini according to the directions on the box. When pasta is done run pasta under cold water to cool. Drain water off pasta.
- Dice tomato and add it to the pasta.
- Dice the green bell pepper and add it to the pasta.
- Add the feta cheese, green olives, mild pepper rings, and sliced pepperoni to the pasta.
- Chop Genoa Salami into bite size pieces and add to the pasta (you will want to have the deli to slice the salami on the thick side).
- Cut mozzarella cheese into small squares and add to the pasta.
- Add the McCormick Salad Supreme, sun-dried tomato pesto, and Italian dressing to the pasta salad.
- Mix well after adding each ingredient.
- Refrigerate for at least one or more hours to let all the flavors mix in to the pasta.

WHOLE-WHEAT PASTA SALAD WITH WALNUTS AND FETA CHEESE

- Cook the pasta according to the directions on the package. Drain the pasta, rinse it under cold water, and put it in the refrigerator to chill.
- In a dry saute pan toast the walnuts over a medium-high flame until they are fragrant, about 2 minutes. Set the walnuts aside to cool then chop them coarsely.
- In a large bowl, toss together the chilled pasta, walnuts, feta cheese, onion, and spinach. In a small bowl whisk the oil, vinegar, garlic and mustard. Pour the dressing over the pasta salad and toss to combine. Season with salt and pepper.

PIMENTO CHEESE MACARONI SALAD
This is inspired by a delicious and creamy pimento dip that my best friend makes whenever we do a weekend barbecue shindig. I decided to make a pasta salad version of that dish featuring elbow macaroni. The addition of diced red bell pepper adds a crunch of freshness that pairs perfectly with the creaminess of the ingredients. This fun and comforting salad is delicious warm or room temperature but can also be made in advance and served cold.

- Bring a large pot of salted boiling water to a rolling boil. Add the macaroni and cook until al dente, about 1 minute less than package directions suggest.
- Meanwhile, in a large bowl, mix the cream cheese, mayonnaise, pimento peppers, Cheddar, chives, smoked paprika, garlic, hot sauce and a pinch of salt and black pepper together until thoroughly combined.
- Transfer the cooked macaroni directly to the large bowl with the cheese mixture and mix until everything is thoroughly combined. Fold in the red bell pepper and garnish with more smoked paprika. Serve immediately or chill in the fridge until ready to serve.
TUNA, CHEESE AND PASTA SALAD
Three-color pasta, cubed cheese, tuna, and roasted sweet peppers blend into a spunky salad that we enjoy over 2 suppers during hot summer days. This is an excellent salad that I've served with or without cashews since sometimes I forget those. Fresh basil is essential to this recipe and we just have some fancy fresh breads and butter with it. I don't recall which of my magazines I got this from but it's favorite of mine.

- Rinse with cold water; drain again.
- Transfer pasta to large bowl.

- While the pasta is still hot, toss it with about half of the dressing, to coat all surfaces. Cover and refrigerate.
- When the pasta has cooled, add in the rest of the ingredients EXCEPT the bacon, and toss. Add more dressing to moisten the salad and put back in the fridge until ready to eat.
- Just before serving toss in the bacon and taste the salad. Adjust the seasoning and add more dressing if necessary.
