MEATBALL AND NOODLE BAKED CASSEROLE

This is one of my favorite casseroles to make. I live alone, so I will make this casserole and have my meal, then I like to portion out the leftovers and put in nice little individual sized containers and throw those in my freezer. Then when I come home from work another night, whether it's next week or one night next month, I can simply pull one of these out and put it in the microwave which makes an easy meal and then I don't have to cook that night. Also nice to take to work for lunches. Good stuff!!

Meatball and Noodle Baked Casserole image

Steps:

  • Preheat oven to 350 degrees.
  • In mixing bowl, combine ground meat, bread crumbs, onion, tomato sauce, salt and pepper. Mix well.
  • Form meat mixture into 24 small balls, (or size them to your preference).
  • Melt 2 tablespoons butter in a skillet. Brown the meat balls on all sides and remove from skillet. Set aside.
  • Add remaining butter (2 tablespoons) to skillet.
  • Blend in the flour. Stir in beef broth and milk. Cook until thick and bubbling, stirring occasionally.
  • Add 1/2 cup of Parmesan cheese, tomato paste, and garlic powder. Mix well. (Continue to stir on low heat with wooden spoon until sauce thickens.)
  • While sauce is cooking (taking care that it doesn't scald), cook the noodles according to package directions, and drain when done.
  • In a casserole dish, place a layer of noodles, meatballs, another layer of noodles, then meatballs, and top with a last layer of noodles.
  • Pour sauce over entire casserole. Sprinkle Mozzarella over the sauce. Cover and bake for about 40 minutes at 350 degrees.

  • Cook pasta according to package directions. Meanwhile, in a small bowl, combine the bread crumbs, 2 tablespoons Parmesan cheese, egg substitute, Italian seasoning, onion powder, salt and garlic powder. Crumble turkey over mixture and mix well., Shape into 1/2-in. balls; place on a baking sheet coated with cooking spray. Bake at 350° for 9-11 minutes or until no longer pink. , Drain pasta and meatballs. In a small bowl, combine meatballs with marinara sauce. Spoon half of mixture into a 1-qt. baking dish coated with cooking spray. Top with half of the pasta, cottage cheese and mozzarella; sprinkle with 1 tablespoon Parmesan cheese. Repeat layers., Cover and bake at 350° for 20-25 minutes or until cheese is melted.

Swedish Meatballs with Noodles image

Steps:

  • Preheat the oven to 475 degrees F (245 degrees C).
  • Combine ground beef, pork, bread crumbs, 1/2 cup milk, egg, garlic, salt, pepper, and allspice in a large bowl; mix until just combined. Use a rounded 1-tablespoon measure to form mixture into meatballs. Place meatballs on a baking sheet.
  • Bake in the preheated oven until golden brown and cooked through, 10 to 12 minutes, rotating sheets halfway through.
  • While the meatballs are baking, melt butter in a medium saucepan over medium-high heat. Add flour. Cook, whisking constantly, for about 1 minute, being careful not to burn or brown the flour. Gradually whisk in the remaining milk and broth. Bring to a boil. Reduce heat and simmer until sauce has thickened slightly, 2 to 3 minutes. Add Worcestershire sauce to taste and remove from the heat.
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes.
  • Drain any grease from the meatballs. Add meatballs to sauce; toss gently to coat. Turn on lowest heat to warm. Add milk or water to thin sauce if too thick.
  • Drain egg noodles and serve immediately topped with sauce, meatballs, and parsley.

Steps:

  • Preheat oven to 375 Degrees and Grease a 3 Quart Casserole Dish.
  • Melt the 1 TBSP Butter over medium heat and add the green bell pepper and onion. Cook until tender, approximately 5 minutes.
  • Pour the jar of pasta sauce, the 2 cups of water, the package of frozen meatballs, the 2 1/2 cups of uncooked macaroni, 1 TSP Italian Seasoning directly into the casserole dish. Add the onion and green pepper. Stir all ingredients until combined.
  • Bake covered for 45 minutes at 375 Degrees. Remove from oven after the 45 minutes is up and sprinkle the 2 Cups of Mozzarella and 1/4 Cup of Parmesan Cheese over the top. Place back in the oven uncovered and broil on high for around 3 minutes or until the cheese is bubbly.
  • This will make 4 Huge Servings or 6 Normal Servings. Freezes Well!

  • In 2 quart glass baking dish, mix spaghetti sauce and water until blended. Add uncooked noodles, stir-fry mixture and meatballs and stir to coat. Make sure noodles are completely covered with sauce mixture.
  • Preheat oven to 350 degrees. Bake casserole, covered, for 45 minutes. Uncover, sprinkle with cheese, and bake uncovered 5-10 minutes longer until casserole is bubbly, noodles are tender and cheese is melted.

  • Heat oven to 375°F. Lightly butter 13x9-inch (3-quart) baking dish; set aside. Heat 6-quart pot of water to boiling; add egg noodles, and cook 5 minutes. Noodles should still be firm through the middle. Drain, and set aside.
  • While noodles are boiling, cook shallots and butter in 3-quart saucepan about 3 minutes, stirring occasionally, until shallots are soft. Stir in flour to make a roux; cook 60 seconds. Steps:

  • Bring a large pot of lightly salted water to a boil. Add ziti and cook, stirring occasionally, about 3 minutes less than the package instructions, about 8 minutes. Drain pasta.
  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 13x9 inch baking dish.
  • Heat oil in a skillet over medium heat and cook meatballs until browned on all sides, about 5 minutes. Add marinara sauce and ricotta cheese; mix to combine. Add cooked pasta and mix to combine. Season with Italian seasoning and garlic powder.
  • Cover the bottom of the prepared baking dish with a layer of sauce without meatballs. Sprinkle 1 cup mozzarella cheese on top.
