FAMOUS MEATBALLS
These meatballs are a favorite for any occasion. I made 14 pounds of meatballs for my sister's graduation party and I only had 1 medium container left over. My mother made sloppy joes and needless to say they had a lot left over because everyone loved these meatballs. Guaranteed favorite!

Steps:
- Pour pineapple chunks with juice into a saucepan. Stir green bell pepper, brown sugar, cornstarch, soy sauce, and lemon juice through the pineapple chunks until sugar and cornstarch dissolve.
- Bring the mixture to a boil; cook and stir until thickened, about 10 minutes.
- Place meatballs into slow cooker crock; pour pineapple mixture over meatballs.
- Cook on Medium for 2 hours, stirring every 30 minutes.

- In a large bowl, combine the first five ingredients. Crumble beef over mixture and mix well. Shape into 1-in. balls. , In a large skillet, brown meatballs in oil, turning often. Remove with a slotted spoon and set aside; drain., To the skillet, add the pineapple, green peppers, sugar, vinegar, oil and soy sauce. Cover and simmer until tender, about 5 minutes. Return meatballs to skillet; simmer until meat is no longer pink. , Combine cornstarch and water until smooth. Stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened.

- Drain pineapple well, reserving syrup.
- Mix together beef, egg, bread crumbs, onion, salt, cloves, allspice and 2 tbsp syrup.
- Mold small amount of mixture around each pineapple chunk.
- Place meatballs in 12x8x2" glass dish.
- Cover with wax paper. Mirowave at High 4 minutes. Pour off meat juices.
- Stir together 1/3 c reserved syrup, ketchup and brown sugar. Pour over drained meatballs and microwave at high 3 to 5 minutes longer, or until done.

- Drain pineapple, reserving juice. Place pineapple and 2 tablespoons juice in a large bowl (set the remaining juice aside for glaze). Add the egg, bread crumbs and pepper to pineapple. Crumble sausage and beef over mixture and mix lightly but thoroughly. Shape into 1-in. balls. , Place meatballs on a greased rack in a shallow baking pan. Bake, uncovered, at 450° for 12-15 minutes or until a thermometer reads 160°., Meanwhile, in a large skillet, combine glaze ingredients and reserved pineapple juice. Add meatballs. I got this recipe from my Granny and it is one of my favourites. Best served over rice or egg noodles.

Steps:
- Combine ingredients for meatballs and form into balls (approx. 36).
- In oiled skillet on medium heat, brown meatballs.
- After meatballs have been browned, add all other ingredients except the green peppers.
- Reduce heat, cover and simmer for 7 minutes.
- Add green peppers and cook for an additional 6 minutes or so uncovered until meatballs are completely cooked and veggies are to desired tenderness.
- Serve over rice or egg noodles.
- Enjoy!

PINEAPPLE MEATBALLS
This is a family favourite; my teenage son eats at least 2 servings himself. Cooking time includes the browning of the meatballs, although you can brown them in the oven on a cookie sheet and make the sauce at the same time, saving yourself a little time.

- Preheat oven to 350F degrees.
- First, make the meatballs: combine all meatball ingredients (there's 7, beef to garlic powder) in a bowl and mix well; shape into 1-inch balls.
- Brown them in a nonstick frying pan (I do it in 3 batches) until browned all over; drain on paper towel then place in a large ungreased casserole dish.
- To make sauce, combine brown sugar and cornstarch in a large saucepan, then whisk in the 1-3/4 cup pineapple juice/water combination until mixture is smooth.
- Add vinegar, soy sauce and worcestershire sauce; stir.
- Simmer, uncovered, on medium-low heat for about 8 minutes, or until thickened.
- Pour sauce over meatballs and add pineapple tidbits; stir gently to combine until meatballs are coated with sauce.
- Bake in preheated oven for 30 minutes.
- If you want a lot, this recipe doubles well.

- 2. Mix together in a large bowl beef, egg, bread crumbs, onion, salt, cloves, allspice and 2 tablespoons of syrup.

- 5. Cover with wax paper and microwave at high for 4 minutes.
- 6. Remove from microwave and pour off meat juices.

- Combine ground beef, onion, egg, 1 tablespoon cornstarch, salt, and pepper in a bowl. Use a cookie scoop to shape into meatballs.
- Heat oil in a large skillet over medium heat. Add meatballs and cook, turning often, until browned and no longer pink in the centers, 7 to 10 minutes. Remove meatballs from the skillet and drain oil, reserving 1 1/2 tablespoons of drippings.
- Drain pineapple chunks from the can, reserving juice; set pineapple aside. Add enough additional pineapple juice to make 1 1/2 cups total.
