CLASSIC MEATLOAF
The secrets to this meatloaf are fresh, very finely diced vegetables that give it moisture and flavor--and a light touch in mixing together the ingredients. This hearty meatloaf is the perfect meal for cool fall and winter evenings, served with mashed potatoes and simple mushroom gravy.

Steps:
- Preheat the oven to 325 degrees F.
- Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
- Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
- Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
- Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
- Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
- Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

Steps:
- Preheat the oven to 325 degrees F.
- Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
- In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

MEATLOAF WITH CARAMELIZED ONIONS
I couldn't find a recipe on this site (or elsewhere) for basic meatloaf with caramelized onions in the mix-not meatloaf with a topping of caramelized onions or "stuffed". Because I wanted the caramelized onions to take center stage, for that reason, you won't find any tomato sauce, mushrooms, no cheese, no strips of bacon on top, etc. in this recipe. The recipe was found on lifeisaplate.com and modified to my specifications. You can substitute other types of ground meat or use other meat in combination: turkey, chicken, buffalo, turkey, etc. Use any preferable binder of your choice, for example-finely ground breadcrumbs, almond or walnut meal, masa harina, rice flour. Brown rice was the binder I chose and it was ground to medium-coarse consistency (similar to cornmeal). The recipe was cut in half because I like meatloaf on the small size and save the larger size when I am need of a doorstop.

Steps:
- Melt the butter in a large pan on medium-low heat. Add the onions and sugar; cook until brown and sweet-approximately 20-30 minutes. Lower the heat if the onions are browning too quickly.
- In a large mixing bowl, combine the meatloaf ingredients with the caramelized onions (including all those browned bits at the bottom of the pan!); Do not overmix.
- Transfer the meatloaf mixture to an oiled or parchment-lined loaf pan. (I used a large soup spoon, patting the mixture down and into the corners of the pan. Use the back of the spoon to smooth the top of the loaf.) If desired, lightly sprinkle the top of the loaf with dried parsley.
- Bake at 375 for 45-60 minutes or until the meatloaf is not longer pink in the center.
- Servings are estimated. Cooking time includes caramelizing the onions.

MEATLOAF ALA SAUTEED ONIONS
A varied version of individual meat loafs. I love sauteed onions and this is one version my family loves. Pork loin sliced thin works wonderfully in place of the meatloaf. When it comes to being the cook everyone should remember all of those wonderful smells and comforting meals. I agree with the statement that cooking is a labor...

Steps:
- 1. BEGIN CARAMELIZING THE SLICED ONIONS ON TOP OF THE STOVE. I USE A COVERED CHICKEN FRYER PAN. PLACE GROUND BEEF, OATS, EGGS, CHOPPED ONION AND ALL OF THE SEASONINGS IN A BOWL AND MIX THOROUGHLY. ONCE THE ONIONS ARE GOLDEN BROWN WHILE COOKING IN THE BUTTER AND OLIVE OIL SLIDE THEM AROUND THE PAN PLACING INDIVIDUAL SIZED MEATLOAF PATTIES AGAINST THE BOTTOM OF THE PAN. ALLOW THE MEAT TO BEGIN BROWNING. ADDING WATER IF THE ONIONS SEEM TOO DRY.
- 2. COMBINE THE 2 DIFFERENT STYLES OF INSTANT MASHED POTATOES TOGETHER AS ONE ALLOWING THEM TO REST A COUPLE OF MINUTES. SMOOTH THE POTATOES OVER THE ONIONS COVERING THE MEATLOAFS, CREATING A MASHED POTATO CRUST (SIMILAR TO SHEPERDS PIE).
- 3. SPRINKLE THE CHEESE ON TOP OF THE POTATOES AND PLACE THE PAN INTO A 350 DEGREE OVEN REMEMBERING TO KEEP PAN SLOWLY COOKING ON TOP OF THE STOVE WHILE ADDING THE TOPPINGS ALLOW TO FURTHER COOK 15 - 20 MINUTES. MAKING SURE THAT THE SIDES ARE BUBBLING BEFORE TAKING OUT TO SERVE. IT WILL BE VERY HOT, BUT DELICIOUS ONCE COOLED A BIT.
