- Cook pasta according to package directions. In a 6-qt. stockpot, heat 1 tablespoon oil over medium-high heat. Add chicken; cook and stir 4-6 minutes or until no longer pink. Remove from pot., In same pot, heat remaining oil over medium heat. Add red pepper and onion; cook and stir 4-5 minutes or until onion is tender. Add garlic; cook 1 minute longer. Add wine, sun-dried tomatoes and seasonings; bring to a boil. Reduce heat; simmer 5 minutes, stirring to loosen browned bits from pot., Add broth and artichoke hearts; return to a boil. Stir in spinach and chicken; cook just until spinach is wilted., Drain pasta; stir into chicken mixture. Stir in feta cheese. If desired, top servings with basil and Parmesan cheese.

- Cook pasta according to package directions., Meanwhile, in a large skillet, cook the chicken, onion and garlic in oil over medium heat for 4-5 minutes or until chicken is no longer pink. Stir in the artichokes, tomato, cheese, parsley, lemon juice, oregano, salt and pepper; heat through. , Drain pasta; toss with chicken mixture. Garnish with oregano if desired.

Steps:
- Combine the flour and cayenne in a shallow bowl. Heat the olive oil in a medium skillet on medium flame until hot.
- Dredge the chicken in the flour mixture, shaking off any excess flour. Place the chicken in the hot skillet and cook until lightly golden, about 3 minutes.
- Turn the chicken over, add the lemon juice, lemon slices, garlic, olives, 1 1/2 tablespoons of the parsley, and the salt and pepper. Cook for 8 to 10 minutes, shaking the pan occasionally and stirring the olive mixture gently to avoid burning the garlic.
- Add the butter to the pan, shaking to combine the sauce.
- Place the chicken breasts on a serving plate, then pour the olive mixture over the top. Garnish with the remaining 1 1/2 tablespoons of the fresh parsley.

- In a large saute pan, heat an ample amount of vegetable oil over medium-high.
- Place the chicken medallions in the pan and saute on both sides until browned.
- Add the garlic, oregano and basil.
- When the garlic starts to brown, add the white wine and chicken stock. Let simmer for 2-3 minutes.
- Add the tomatoes, olive oil, lemon juice, salt and pepper, spinach and feta cheese.
- Toss well while simmering for about 1 minute more.
- Add to the hot, cooked pasta (reheat first if necessary; toss well and serve.

- In 4-quart Dutch oven, cook and drain pasta as directed on package, omitting salt. Return to Dutch oven; cover to keep warm.
- Meanwhile, in 12-inch nonstick skillet, heat oil over medium heat. Add onion; cook 3 to 4 minutes, stirring occasionally, until crisp-tender. Add zucchini and garlic; cook 2 minutes. Stir in chicken, tomatoes, tomato sauce, oregano and basil. Reduce heat to medium-low; simmer 5 to 7 minutes, stirring occasionally, until zucchini is tender and mixture is hot. Stir in olives.

- Cook penne according to package instructions. Heat 1 tbs oil in large saute pan over medium-high heat. Add chicken, garlic and a dash of salt and pepper. Cook, stirring occasionally, for 5 minutes or until the chicken is lightly browned and thoroughly cooked. Transfer to a plate and cover to keep warm. Heat 1 tbs oil in skilled over medium-high heat. Add zucchini; cook, stirring occasionally, for 2 minutes or until crisp-tender. Stir in tomatoes, spinach, chicken broth and oregano. Reduce heat to medium. Cover and cook for 3 minutes or until zucchini is tender and spinach is wilted. Add chicken. Stir gently for 1 minute or until warm. Season with additional salt/pepper. When penne is done, drain well and return to pan. Add remaining 1 tbs oil and toss. To serve, spoon penne into shallow pasta bowls. Top with chicken-vegetable mix and garnish with pepper and feta cheese.

- Heat the oil and 2 tablespoons white wine in a large skillet over medium heat. Add chicken and saute about 4 to 6 minutes each side, until golden. Remove chicken from skillet and set aside.
- Saute garlic in pan drippings for 30 seconds, then add onion and saute for 3 minutes. Add tomatoes and bring to a boil. Lower heat, add 1/2 cup white wine and simmer for 10 minutes. Add thyme and basil and simmer for 5 more minutes.

- Spread the garlic on both sides; insert some garlic into the slits you made. Season the chicken breasts on both sides with salt, pepper and 1/2 of the dried oregano.
