SOUTHERN BISCUITS

- Preheat oven to 450 degrees.
- In a large mixing bowl, combine flour, baking powder, baking soda and salt. Using your fingertips, rub butter and shortening into dry ingredients until mixture looks like crumbs. (The faster the better, you don't want the fats to melt.) Make a well in the center and pour in the chilled buttermilk. Stir just until the dough comes together. The dough will be very sticky.
- Turn dough onto floured surface, dust top with flour and gently fold dough over on itself 5 or 6 times. Press into a 1-inch thick round. Cut out biscuits with a 2-inch cutter, being sure to push straight down through the dough. Place biscuits on baking sheet so that they just touch. Reform scrap dough, working it as little as possible and continue cutting. (Biscuits from the second pass will not be quite as light as those from the first, but hey, that's life.)
- Bake until biscuits are tall and light gold on top, 15 to 20 minutes.

- Preheat the oven to 400 degrees F.
- Whisk together the 12 ounces flour, baking powder, baking soda and kosher salt in a large mixing bowl. Using your fingertips, rub the butter and shortening into the dry goods until the mixture resembles coarse crumbs. Make a well in the middle of this mixture and pour in the buttermilk. Stir with a large spoon until the dough just comes together. Then knead in the bowl until all the flour has been taken up.
- Turn the dough out onto a floured surface, then start folding the dough over on itself, gently kneading for 30 seconds, or until the dough is soft and smooth. Press the dough into a 1-inch thick round. Using a 3-inch round cutter, cut out biscuits, being sure to push the cutter straight down through the dough to the work surface before twisting to "punch" out the biscuit. Make your cuts as close together as possible to limit waste.
- Place the biscuits on a half sheet pan so they just barely touch. Reroll any scraps and punch out as many biscuits as possible. Use your thumb to create a shallow dimple in the top center of each biscuit and bake until the biscuits are tall and light gold on top, 15 to 20 minutes. Turn the biscuits out into a kitchen towel-lined basket and cool slightly before serving.

FLUFFY SOUTHERN BISCUITS
These turn nice and golden and have a slightly crisp outside with a fluffy, buttery inside. I like these because they taste so good and are healthier than the traditional version, using margarine instead of shortening, butter, or lard. Buttermilk can be subbed for milk for a tangier flavor. - Preheat oven to 450°F.
- Sift together dry ingredients, then add margarine and cut in until coarse and crumbly like cornmeal.
- Add milk and mix with a fork.
- On a floured surface, knead gently turning over several times. Roll out to 1/2 inch thickness and cut out biscuits. Place with sides touching on an ungreased cookie sheet.
- OR drop by large spoonfuls onto an ungreased baking sheet with sides touching.
- Bake for 9-12 minutes, till golden, turning around once halfway through for even browning.
- Serve warm with butter and fried chicken!

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with butter.
- Mix cooked chicken, sour cream, onion, cream of chicken soup, and milk in a large bowl; pour into the prepared baking dish.
- Bake in the preheated oven until hot, about 15 minutes.
- Stir 1/2 cup Cheddar cheese into the mixture and arrange unbaked biscuits over top of casserole. Sprinkle remaining 1/2 cup Cheddar cheese over biscuits.

MELANIE'S SOUTHERN BISCUITS
I love this recipe. My very dear friend in Atlanta makes these when we come to visit. Her family secret is to bake these in a very hot, oiled black cast iron skillet. Have some fresh creamy butter and blackberry jam or honey close by - they may not make it to the table!

Steps:
- Mix the dry ingredients together in a mixing bowl.
- Blend in the 2 Tablespoons Crisco until the mixture is coarse and grainy, using a fork or pastry blender.
- With a fork, stir in the buttermilk.
- DO NOT OVERMIX.
- On a floured board pour dough out and knead 4-5 times.
- Pat the dough out to about 1/2-inch thick.
- Cut with biscuit cutter or a floured dipped glass into rounds or pizza cutter for squares.
- It is very important not to handle the dough too much as it will get tough.
- Place 1 Tablespoon Crisco in heavy black cast iron skillet; place in pre-heated 500º oven for 5-6 minutes.
- Crisco and skillet should be very hot.
- Remove skillet from oven and place the biscuits in the skillet, turning each once in the oil.
- Bake for 10 minutes or till light brown.
