This is super easy and is great with so many things. You can eat it as a dip with tortilla chips, top a baked potato or salad greens with it or spoon over fish, chicken or steak. I usually bring it to parties as a dip and everyone asks for the recipe.

TEXAS CAVIAR
Up your snack game with this quick and colorful recipe for Texas caviar that can be a dip, salad topping, taco filling and more. Jalapeno provides a kick, but you can remove the seeds or omit it altogether for less heat.

- Combine the vinegar, oil, water, sugar, salt and pepper in a medium saucepan over medium-low heat. Whisk together and simmer for 3 minutes then remove from the heat. Set aside to cool.
- Meanwhile, combine the black-eyed peas, black beans and corn in a large bowl. Add the onion, bell peppers and jalapeno, then pour in the dressing and stir until well combined.
- Serve the Texas caviar immediately with tortilla chips or cover and refrigerate for up to 24 hours.

- Combine the black beans, black-eyed peas, pinto beans, shoepeg corn, celery, cilantro, red and yellow bell peppers, green onion, pimento peppers, jalapeno pepper, and garlic in a large bowl. Set aside.
- Bring the rice vinegar, olive oil, sugar, salt, and black pepper to a boil in a saucepan over medium-high heat until sugar is dissolved, about 5 minutes. All to cool to room temperature, then pour over the bean mixture. Cover and refrigerate for 2 hours or overnight. Drain before serving.

- Drain and rinse the beans and peas.
- Chop the pimentos.
- Chop the celery.
- Chop the onion.
- Chop the jalapeños.
- Add the corn.
- Mix together the above solids:.
- Then in a saucepan mix:
- olive oil.
- cider vinegar.
- sugar.
- Cook liquids until the sugar dissolves.
- Pour liquid over the solids - cover and put in refrigerator for at least one hour.
- Drain liquid and serve. Fritos scoops work great with the dip.

- Fry the chopped onion in olive oil until soft. Add soft brown sugar, wine vinegar and Cajun seasoning. Cook for 1 min then add the mixed beans and chopped tomatoes with garlic. Simmer for 10-15 mins until the sauce has thickened then season.
- Scatter handful grated cheddar onto tortilla chips. Microwave on High for 1 min until cheese has melted. Serve alongside the dip (top with some chopped avocado if you like). Make ahead and reheat dip before guests arrive.

OLIVE DIP AKA MEXICAN CAVIAR
This recipe has evolved through the years,and finally it's been perfected. It is requested alot from my family to bring to family functions..Best served with "Frito Scoops."

- 1. Using a large mixing bowl, open the cans of olives and drain well. Then slice each olive into about 4 pieces..do that with both cans of olives. Then open jar olives, drain and slice also, add to bowl.
- 2. Chop tomatoes, onions and garlic and add to same bowl. Mix well. Then add the olive oil, red wine vinegar, salt and pepper and mix again.
- 3. It is best to let this sit in the fridge, covered, overnight, stir every now and then to blend flavors. Serve with Frito Scoops. I have also used tortilla chips, but everyone seems to like the Scoops the best.

This is a great, easy recipe people love. Our family has made it for gatherings for as long as I can remember. Refried beans are layered with guacamole, a seasoned sour cream mixture, cheese and vegetables. Serve it with tortilla chips. Enjoy!
