- In a saucepan over medium heat, bring water, salsa and bouillon to a boil. Stir in rice; remove from the heat. Cover and salt stand 6-8 minutes or until liquid is absorbed. Fluff with a fork.

MEXICAN FIESTA RICE
Make this tasty Mexican rice to serve a crowd. Our recipe is vegan but if everyone you're cooking for eats meat, some chopped bacon in with the onions works well

Steps:
- Heat the oil in a large saucepan with a lid, then add the onion, pepper, garlic and cumin and sizzle gently for 8-10 mins until the vegetables are soft and golden. Stir in the tomato purée and smoked paprika and cook for 1 min, then stir in the rice.
- Pour over the stock, then cover and bring to the boil. Stir quickly, then cover again and place on the lowest heat possible. Simmer for 10 mins. Turn off the heat and leave, covered, for a further 10 mins. If serving straightaway, stir through the coriander and spring onions; alternatively, leave the rice to cool, chill, then re-fry before serving and stir the coriander and spring onions through at the end.

- Heat oven to 375ºF.
- Brown meat in large nonstick skillet; drain. Return meat to skillet.
- Reserve 1 cup cheese for later use. Add remaining cheese and all remaining ingredients to meat; mix well.
- Spoon into 13x9-inch baking dish sprayed with cooking spray; cover.
- Bake 40 to 50 min. or until rice is tender. Top with reserved cheese; bake, uncovered, 5 min. or until melted.

MEXICAN FESTIVAL RICE
I don't know that this is even remotely close to being a Mexican recipe but it is a very colorful dish and I serve it when our dinner group gets together and we do a Mexican theme. To make it more hearty you can add a 15 oz drained can of black, pinto or kidney beans!

- Melt margarine in a saucepan over medium heat. Add garlic and cook stirring for 1 minute. Add rice, stir to coat. Add broth; bring to boil. Reduce heat, cover and simmer 15 mintues.
- Stir in corn, bell pepper and tomatoes. (Beans if you like) Cook an additional 5-10 minutes or until rice tender and liquid is absorbed.
- Stir in onions right before serving.

- Heat the oil in a large skillet over medium-high heat.
- Add the onion and garlic and cook for 3 to 4 minutes.
- Reduce the heat to low for 3 minutes, stirring constantly to make sure the rice doesn't burn.
- Add the Rotel, the whole tomatoes, cumin, cayenne, and salt.
- Stir to combine and cook for 2 minutes.
- Add 2 cups of the broth and bring to a boil.
- Reduce the heat to low, cover, and simmer for 10 to 15 minutes more, or until the rice is done.
- Add more liquid as needed. The rice shouldn't be sticky.
- Just before serving, sprinkle lots of freshly chopped cilantro over the top.
