TACO DIP WITH GROUND TURKEY
I came up with this recipe for a party and it has gotten rave reviews every time I make it. I originally started out with ground beef, but have switched to turkey because it's healthier, it doesn't have to be drained, and with the taco seasoning, you can hardly tell the difference anyway! I do not recommend fat free cheddar cheese as it does not melt as easily, and it can make it more difficult to get through all of the layers with the tortilla chips.

Steps:
- Preheat oven to 350°F.
- Cook ground turkey in frying pan until completely cooked through. Drain if necessary. Add taco seasoning and stir until seasoning is evenly distributed throughout.
- In a 2 quart casserole dish or aluminum baking tin, spread cream cheese to cover the bottom of the dish evenly.
- Layer turkey evenly, followed by 1/2 of the shredded cheddar cheese. Layer salsa on top of cheese, and cover with the remaining 1/2 of cheese.
- Bake uncovered in oven for approximately 20-25 minutes, or until the cheese is melted.
- Let stand for 5 minutes and serve with tortilla chips.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat olive oil in a skillet over medium heat. Add ground turkey and cook until no pink remains, about 5 minutes. Mix in salsa and taco seasoning.
- Layer turkey mixture, refried beans, tortilla chips, enchilada sauce, and American cheese in a 9x13-inch pan. Top with olives.
- Bake in the preheated oven until heated through, 15 to 20 minutes.

This is a scrumptious taco dip. When I use all low-fat ingredients, such as low-fat sour cream and low-fat Cheddar, it still comes out so delicious! Serve with baked tortilla chips for dipping.

FANTASTIC MEXICAN DIP
This recipe was given to me by my sister-in-law and always goes fast! Cream cheese at the base of the dip makes it extra thick and scoopable. Seasoned beef and vegetables make it extra filling and tasty! You may want to prepare two batches. Serve with tortilla chips and enjoy.

- Crumble ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, mix in the taco sauce and set aside.

- In a skillet, cook turkey over medium heat until no longer pink; drain. Add taco seasoning and water; cover and simmer for 10 minutes. Spoon turkey onto a 12-in. serving plate or pizza pan. - In a large frying pan, add 2 tsp of olive oil and heat over medium heat. Add the ground turkey to the pan. Top the ground turkey with 1/4 tsp salt, 1/4 tsp ground pepper, a pinch of red pepper flakes, 3/4 tsp chili powder, 3/4 tsp garlic powder, 1/8 tsp cumin, 3/4 tsp paprika, 1/2 tsp onion powder, 1 tsp dried parsley, and 1/2 tsp oregano. Mix the spices into the ground turkey while breaking the turkey up into smaller pieces. Add 3 Tbs tomato paste, and 2 Tbs hot sauce to the ground turkey and mix. Then move the ground turkey in the pan so that it fills only 1/2 of the pan, put the diced red pepper so it fills the other half of the pan.
- Pour the Magic Ground Turkey Taco mixture into an 8 in x 8 in pan and even it out with a spatula. Heat the refried beans in the microwave and evenly spread on top of the meat with a spatula. Add the salsa on top of that and spread it out evenly with a spatula. Pour the guacamole on top, and spread it out evenly with a spatula. Then, sprinkle the shredded lettuce on top of the guac layer. Next add the olives. Lastly add your queso layer and evenly spread it out with a spatula.
