MICROWAVE BAKED APPLES
This is an easy and fast baked apple recipe. Great for brunch or snack. Stuff the apples with any additional fruits that you wish -- cranberries stuffed into apples are especially delicious.

Steps:
- Core the apples, leaving the bottom intact.
- In a bowl, mix the brown sugar, cinnamon and nutmeg. Spoon the sugar mixture into the apples and set a teaspoon (or more to your taste) of butter on top of each apple. Place the apples in a deep casserole dish and cover.
- Microwave for 3 1/2 to 4 minutes or until tender. Let the apples sit for a couple minutes before serving.

APPLE-ORANGE-CRANBERRY RELISH
Steps:
- Grate the zest from the whole orange and set aside. Cut off any remaining pith from the orange. Cut the orange into chunks. Peel the apple and remove the core; cut into large pieces.
- In a food processor, combine the orange zest and chunks, apples, cranberries and celery and process until finely chopped; be careful not to process too long because the mixture will become mushy. Add the walnuts and pulse until chopped. Stir in the sugar and orange liqueur. Refrigerate until serving time, at least 2 hours and up to overnight.
EASY CRANBERRY SAUCE - MICROWAVE
This is a very easy way to make cranberry sauce. Try to use orange juice if possible, it really brings out "life" to the cranberry sauce. This is a fantastic recipe for cranberry sauce, I make it all the time for holidays, you can prepare this well in advance even days ahead, cover and refrigerate. If you are doubling the recipe then make in two separate microwave-safe bowls, don't double the recipe into one bowl or it will overflow in the microwave.

Steps:
- Combine all ingredients in a 3-qt microsafe bowl; mix well.
- Cover with wax paper.
- Microwave on high for 5 minutes.
- Stir well; recover with wax paper.
- Microwave another 5-7 mins longer until cranberries pop, and sauce has thickened.
- Let stand, covered until cool.
- Transfer to serving bowl and chill for 3-4 hours.
QUICK AND EASY CHUNKY MICROWAVE MAPLE CINNAMON APPLE/PEAR SAUCE
Maple syrup adds a nice flavor to the apples and pears. I have actually used a variety of different apples, depending on what I had on hand, with the same great results. The apple/pear sauce can be refrigerated for up to 2 weeks or frozen for up to 6 months.

- Combine Cortland apples, Golden Delicious apples, and Bartlett pears together in a large, microwave-safe bowl. Add water, cinnamon, and nutmeg to the apple-pear mixture and toss to coat.
- Cover bowl tightly with plastic wrap and cut a 1-inch slot in the center of the plastic wrap to allow steam to escape.
- Cook apple mixture in the microwave on high for 10 minutes. Carefully remove and discard plastic wrap. Stir apple mixture. Cook in the microwave on high until fruit is hot and tender, another 6 minutes.
- Stir maple syrup into fruit mixture. Cool completely before refrigerating.

STRAWBERRY ORANGE JUICE SAUCE
Use over ice cream or my Cream Cheese Pound Cake with Strawberry Sauce (recipe #51739). You won't be disappointed. When I make this using fresh strawberries, I cut the strawberries in half, put into the food processor with about 1 cup of sugar and the orange juice and process until well combined. - Peel, core and slice the apples.
- Place apples in a large microwave-safe bowl.
- Add in 1/4 cup water, cinnamon (start with 1/2 teaspoon) and nutmeg, if using; stir to combine.
- Cover with heavy microwave-safe plastic wrap (leave a little side opened to allow steam to escape).
- Microwave on HIGH power for 10 minutes.
- Remove the bowl and stir the apples, then contine to microwave uncovered until apples are very tender (about 5-6 minutes longer).
- Using a large fork (I use a potato masher for this) coarsley mash apples to desired texture.

- Use firm apples, roughly the same size. Anytime you’re making more than one “baked” apple in the microwave, you’ll want to use apples that are roughly the same size.
- Decide how to prep them. When it comes to how you’ll prep and serve the apples, you can leave them whole and core the center of the fruit, or cut the apples in half lengthwise and scoop out the core that way.
- Cover the baking dish. Just as with the oven-baked version, you should put the apples in a baking dish just large enough for the quantity you’re cooking (one which will fit in the microwave and isn’t made of metal, of course), and add some water to the bottom of the dish — about 1/4 cup per apple.
- Increase the cook time when you use more apples. When making “baked” apples in the microwave, it’s just as easy to make one as it is to make four. But remember that the more apples in the baking dish, the longer the cook time.
- Don’t expect crunchy bits. The lack of dry, hot air circulating around the apples as they cook in the microwave means that the bits of oat filling that peek out of the apples won’t crisp the way they would in the oven.
- Do make the most of the sauce. Who needs crunchy bits when your dessert makes it own sweet sauce? Remember that thin layer of water added to the baking dish for cooking?
- Toast nuts separately (and add after). Toasted nuts, like walnuts and pecans, can make a delicious addition to baked apples. When making this dessert in the microwave, wait until after cooking and sprinkle the nuts on top.
