Steps:
- Preheat oven to 450°F (230°C).
- Sift together flour, sugar, baking powder, cream of tartar and salt.
- Cut in shortening/butter with pastry blender or two knives until it resembles a coarse meal. (Or you can just rub it in with your fingers).
- Combine egg and milk.
- Add this to the flour mix all at once, stirring with fork just enough to make a soft dough that sticks together.
- Knead lightly on lightly floured surface 15 times.
- Roll out to 1" (2.5cm) thickness.
- Cut with floured 2" (5cm) cutter and place 1" (2.5cm) apart on ungreased baking sheet.
- Bake in oven 12 - 15 minutes or until golden brown.
- Serve immediately.

MILE HIGH BISCUITS
This recipe is from the Tinsley House Cookbook. The Tinsley House is an old farm house that's part of the Museum of the Rockies in Bozeman, MT. I made these biscuits for the first time recently and they are by far the best biscuits I've ever had!

Steps:
- 1. Combine dry ingredients and cut in butter with pastry blender. Combine egg and milk. Add to dry ingredients and stir until well moistened. Knead 10 times. Roll out 1" inch, cut with 2 1/2" cutter. Bake on ungreased cookie sheet until done 12-15 minutes.
MILE HIGH SCONES
I received this recipe from a friend in London. The result is light, flaky, mile high scones, every time!

- 1. Preheat oven to 425 degrees. Place baking sheet in oven to preheat as well.
- 2. Warm milk in the microwave for 30 seconds. Add vanilla and lemon juice to milk. Set aside. In a separate bowl, mix all dry ingredients with a whisk. Add butter to dry mixture and use your hands to quickly incorporate the butter until the mixture beings to crumble. Make a well in the center of the dry and add the wet, mixing just until combined.
- 3. Gather dough together and on a floured surface fold the dough over itself 4 times, leaving it at 2 inches in height. Cut into scones using a sharp knife or round cutter. Brush beaten egg on and sprinkle sugar on top.
- 4. Carefully place scones on hot baking sheet and bake for 10 minutes. Eat or freeze immediately. Serve with jam and homemade clotted cream!!!
MILE HIGH BISCUITS
I got this recipe in a church cookbook years ago and have been making them ever since. They are extremely tender with a flavor that no store bought biscuit could ever come up with. Makes breakfast or any meal special. (And they are so easy too)

Steps:
- Combine dry ingredients in a mixing bowl.
- Cut in shortening until mixture resembles coarse crumbs.
- Add egg and milk;mix until dough forms a ball.
- Turn dough out on a lightly floured surface and knead 10- 12 times, only.
- Roll out to 3/4 inch, cut with floured cutter.
- Place on lightly greased baking sheet.
- Bake at 475 degrees for 12- 15 minutes or until light brown.

Steps:
- Preheat oven to 450 Degree's.
- Mix dry ingredients.
- Cut in shortening.
- Add egg in the cup of milk and whisk.
- Add to mixture of dry ingredients mixed with shortening.
- Knead into a ball.
- Pull apart and roll pieces the size of a tennis ball in palm of your hand.
- May be rolled out and cut with a circular dough cutter @ desired thickness.
- Melt butter.
- Put either ball or circular cut out dough on cookie sheet.
- Indent top of biscuit and brush melted butter on top.
- Bake for 15 minutes @450.

- Add egg and milk to dough and stir until just combined. Dough will be moist. Turnout onto floured work surface and knead 10 times, rotating the dough as you go and adding more flour to hands/worktop if needed.
- Roll out dough to 1” thickness. Cut out biscuits using a 2 1/2” cookie or biscuit cutter. Reform any dough scraps to make more biscuits until all dough is used up.
- Place biscuits on ungreased cookie sheet or baking pan. Bake for 12-15 minutes, brushing with melted butter halfway through baking. Tops should be golden brown when done.
