GRANOLA BARS

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease a 9-inch square baking dish.
- Spread the oats and coconut evenly across a baking sheet.
- Toast oats and coconut in preheated oven until browned, about 10 minutes; transfer to a large mixing bowl.
- Mix honey, peanut butter, vanilla extract, and salt in a saucepan over medium-low heat. Cook and stir until smooth. Pour the honey mixture over the oats and coconut; stir to coat. Spread the mixture evenly into the prepared baking dish.
- Bake in preheated oven until beginning to dry, about 15 minutes for crunchy granola bars, less if you like them chewy. Cool completely before cutting.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Stir oats, milk chocolate pieces, flour, flax seed meal, brown sugar, and salt together in a large bowl. Make a well in the center of the oat mixture.
- Whisk egg in a separate bowl until light and fluffy. Add honey, oil, and vanilla; whisk until well-combined. Pour egg mixture into the well in the oat mixture. Stir until evenly combined. Pour mixture into a 9x13-inch glass baking dish; pat down and spread the mixture flat, leaving at least 1-inch of space between the mixture and the sides of the dish.
- Bake in the preheated oven until golden and set, about 25 minutes.

GRANOLA BARS

- Butter a 9 by 9-inch glass baking dish and set aside. Preheat the oven to 350 degrees F.
- Spread the oats, sunflower seeds, almonds, and wheat germ onto a half-sheet pan. Place in the oven and toast for 15 minutes, stirring occasionally.
- In the meantime, combine the honey, brown sugar, butter, extract and salt in a medium saucepan and place over medium heat. Cook until the brown sugar has completely dissolved.
- Once the oat mixture is done, remove it from the oven and reduce the heat to 300 degrees F. Immediately add the oat mixture to the liquid mixture, add the dried fruit, and stir to combine. Turn mixture out into the prepared baking dish and press down, evenly distributing the mixture in the dish and place in the oven to bake for 25 minutes. Remove from the oven and allow to cool completely. Cut into squares and store in an airtight container for up to a week.

LOLA GRANOLA BARS

- Preheat the oven to 350 degrees F. Line a 7- by 11-inch baking pan with parchment paper and spray with cooking spray.
- In a bowl, stir the oats, sunflower seeds, almonds, coconut, flax seed meal and cinnamon. Transfer to a dry sheet tray and toast in the oven for 15 minutes. Transfer to a bowl.
- While dry ingredients toast, in a medium pot, add the honey, coconut oil and vanilla. Bring to a boil over medium heat and cook until the honey turns a copper color, 12 to 15 minutes.
- Pour the honey into the dry ingredients and mix until well coated with the honey mixture.
- Pour onto the prepared baking pan. Pack down the ingredients. Bake for about 10 minutes; the middle may seem slightly sticky but it will cool nicely. Let cool in the refrigerator for 1 hour. Flip over, take off the parchment and cut into rectangles. Serve.
- For other flavors, make the following substitutions to the recipe above: Ruby (Cranberry): Omit the almonds and add an additional 1/4 cup dried cranberries. Nathan (Blueberry/Almond): Substitute the cranberries with dried blueberries. Enzo: (Cashew/Almond): Omit the cranberries and add 1/4 cup cashews to the dry ingredients. Ellie (Cashew/Date): Substitute the almonds with cashews and substitute the cranberries with dried dates.
ROCKY ROAD GRANOLA BARS

- Grease a 9-inch square baking pan with cooking spray, line the bottom with parchment paper and set aside.
- Combine the oats, flax seed, digestive biscuits, walnuts and chocolate chips in a large heat-proof bowl.
- Combine the sugar, honey, corn syrup and butter in a small saucepan set over medium heat. Cook, stirring occasionally, until the butter melts and the mixture starts to boil. Once it has come to a light boil, cook the mixture for 2 minutes to dissolve the sugar.
- Remove the pot from the heat and stir in the vanilla and kosher salt. Add to the oat mixture and stir to combine. Stir in the marshmallows, if using.
- Scrape the mixture into your prepared pan and press firmly into an even layer. Place the pan in the fridge for about 1 hour to firm up.
- Carefully lift the granola bars out of the pan and slice into 12 equal bars. Wrap individually in parchment, wax paper or plastic wrap and place in a tightly sealed container.
- For a chewier bar, store in the fridge. For softer bars, store in the cupboard.
