Mindys Chicken Salad Recipes
BASIC CHICKEN SALAD
This basic chicken salad is a family favorite. I like to use baked thighs or breasts that have been sprinkled with basil or rosemary.

Steps:
- Place almonds in a frying pan. Toast over medium-high heat, shaking frequently. Watch carefully, as they burn easily.
- In a medium bowl, mix together mayonnaise, lemon juice, and pepper. Toss with chicken, almonds, and celery.

MINDY'S CHICKEN SALAD
I brought along this sweet-and-savory Chicken Salad on a camping trip and my brother-in-law whined that he hated chicken salad. Needless to say, he gobbled up the sandwiches without complaint! It makes for a beautiful luncheon or shower dish, particularly served with petite rolls or over lettuce leaves and topped with ripe avocado. By the way....Mindy's my hairdresser; her husband loves to make this salad.

Steps:
- Combine chicken, bacon, water chestnuts, celery and grapes in a large bowl.
- In small bowl, whisk remaining ingredients together.
- Combine with chicken mixture, using as much or as little mayonnaise needed to moisten to your taste.
- If you like a creamier salad, add a little more mayonnaise.
- Chill well and stir before serving.

MINTY PEACH CHICKEN SALAD
Great for a summer luncheon or without the chicken as a salsa! Use a slotted spoon to serve on lettuce-lined plates.

- Combine peaches, chicken, and cucumber in a large bowl.
- Blend vinegar, mint, sugar, lemon juice, salt, pepper, and hot sauce in a blender until vinaigrette is smooth. Drizzle vinaigrette over peach mixture; toss to coat. Cover bowl with plastic wrap and refrigerate until chilled, at least 30 minutes. Fold avocado into salad before serving.
