GRANDMA'S ITALIAN GRILLED CHEESE SANDWICH
This is a great twist on the classic grilled cheese. My grandmother taught me how to make these when I was a teenager. My kids love them!

- Whisk eggs, milk, garlic powder, Italian seasoning, and Parmesan cheese together in a bowl.
- Place each American cheese slice between two pieces of bread to assemble 6 sandwiches.
- Dip both sides of each sandwich in egg mixture.
- Heat a non-stick frying pan over medium heat.
- Place dipped sandwiches in the hot frying pan; cook until golden brown and cheese is melted, about 3 minutes per side.

- Whisk the eggs, cream, salt, and pepper in a medium bowl until well blended. Heat a 6-inch-diameter nonstick skillet over medium-low heat. Brush the skillet with some butter. Pour 1/4 cup of the egg mixture into the pan, swirling to coat the bottom of the pan evenly. Cover and cook until the egg crepe is just set, about 1 minute and 30 seconds. Invert the skillet over a plate, and allow the egg crepe to drop onto the plate. Repeat to make 4 crepes total, brushing the skillet with melted butter as needed and stacking crepes on the plate.
- Cook the bacon in a heavy large frying pan until crisp. Transfer the bacon to paper towels to drain.
- Preheat a griddle or grill pan over medium-high heat. Cut the focaccia horizontally in half. Place the focaccia cut side down on the griddle and cook until the focaccia is heated through and golden brown on the bottom, about 2 minutes. Spread the pesto over the toasted sides of each halved focaccia. Cover the bottom halves of the focaccia with the egg crepes, turkey, provolone and bacon, dividing equally. Cover with the top halves of focaccia, pesto side down. Cut the sandwich into bite-size wedges. Arrange the sandwiches on a platter and serve.
MINI SAGE-AND-FONTINA GRILLED CHEESE SANDWICHES

- Melt butter in small saucepan over medium heat; sprinkle with salt. Pour half of butter into small bowl and reserve. Add chopped sage to remaining melted butter in saucepan; stir over medium heat 30 seconds.
- Arrange 8 bread slices on work surface. Brush top side with all of melted sage butter. Divide Fontina cheese among bread slices; sprinkle Parmesan over each, dividing equally. Sprinkle with freshly ground black pepper. Top with remaining 8 bread slices, pressing to adhere. Brush top side of sandwiches with some of reserved plain melted butter. Press 4 whole sage leaves atop each sandwich to adhere.
- Heat 2 heavy large skillets over medium heat. Place 4 sandwiches, sage-leaf side down, in each skillet and cook until golden brown on bottom, 4 to 5 minutes. Brush top of sandwiches with remaining plain melted butter; turn sandwiches over and cook until golden brown on bottom and cheese melts, about 4 minutes. Transfer sandwiches, sage-leaf side up, to cutting board. Cut each sandwich into 4 pieces (each mini sandwich should contain 1 whole sage leaf). Transfer to platter and serve.

Steps:
- 1. In a small skillet, cook pancetta until crisp. Drain on a paper-towel-lined plate; set aside.
- 2. Heat medium-sized skillet on medium-high heat. While skillet is heating, assemble sandwiches. Place one slice of mozzarella cheese on bread heel.
- 3. Top with pancetta, 2 Tbsp Parmesan cheese (per sandwich).
- 4. Then place the sliced roasted red peppers.
- 5. Place other half of bread slice on top. Butter the tops of the sandwiches.
- 6. Melt 2 tablespoons of butter in the skillet.
- 7. Place sandwiches in the skillet with buttered tops facing up.
- 8. Let cook for 2 minutes and carefully flip sandwiches over.
- 9. Press down to flatten slightly. Cook for about 2 more minutes or until bread is lightly browned. Serve warm. Makes 2 servings (2 sandwiches each)

Steps:
- Preheat your oven's broiler.
- Place 6 slices of bread onto a baking sheet. Spread a small handful of the mozzarella cheese over each slice. Top with the remaining 6 slices of bread. Mix together the butter and garlic powder, brush some over the tops of the sandwiches, or spread with the back of a tablespoon. Sprinkle with dried oregano.
- Place baking sheet under the broiler for 2 to 3 minutes, until golden brown. Remove pan from oven, flip sandwiches, and brush the other sides with butter, and sprinkle with oregano. Return to the broiler, and cook until golden, about 2 minutes.
- Cut sandwiches in half diagonally, and serve immediately with vodka sauce on the side for dipping.
