Steps:
- Place tortilla chips on serving platter. Top each chip with 1 1/2 teaspoons guacamole, 1 1/2 teaspoons beans and 1 tablespoon chicken. Sprinkle with cilantro. Serve with salsa.
- Serve immediately, or cover and refrigerate up to 30 minutes before serving.

Steps:
- 1. Cut 24 circular pieces out of tortillas using 3 inch diameter cookie cutter. Makes 24 foil balls, 1 inch in diameter.
- 2. Heat oil in skillet. Soften tortilla circles, one at a time, by dipping in hot oil, drain and put in mini muffin pan.Quickly push a foil ball down in center of tortilla circle to form tostada cup. Put in 400 oven for 10 minutes til golden and crispy.
- 3. Remove foil balls. Put the beef and chopped onions in a skillet over medium heat, break up meat and fry til meat is brown. Drain grease and add the tomato sauce, cumin, pepper, chili powder and salt Stir til mixture thickens.
- 4. Heat beans and fill cups with layers of beans, meat mixture, shredded lettuce, cheddar cheese, sour cream and sliced olives. Top with salsa.

- Place oven rack in lowest rack position; heat oven to 400°F. Spray one side of each tortilla with cooking spray. With 2 1/2-inch round cutter, cut 5 rounds from each tortilla (if desired, stack 2 tortillas to cut).
- On ungreased large cookie sheets, place tortilla rounds with sprayed sides down. Spread each round with beans. Set aside 1 tablespoon of the onions. Sprinkle rounds with remaining onions and cheese.
- Bake on lowest oven rack 11 to 13 minutes or until bottoms are crisp and cheese is melted and bubbly. Top each with about 1 teaspoon sour cream and some of the reserved onions.

- In a medium skillet, over medium heat, brown ground beef. Drain and add taco seasoning. Mix well. Set aside.
- On a cutting board, lay flour tortillas out flat, using a 3 inch biscuit cutter, cut out 4-5 circles per tortilla. On one side of each circle make a straight cut half and inch towards to the center of the circle.
- Spray two mini 12 cup muffin tins with non-stick cooking spray. Slightly overlap each cut tortilla and press into bottom of muffin tin. Brush each tortilla shell with melted butter. Bake for 5 minutes or until lightly golden brown.

- PREP TORTILLAS: Adjust oven racks to upper-middle and lower-middle positions; preheat oven to 250 degrees F. Line tortillas in an even layer on two baking sheets then use a fork to poke the center of each tortilla 3 or 4 times (to prevent puffing when frying/more even cooking). Bake for 10 minutes to help them dry out and fry up crispier, switching sheet positions half way through. Meanwhile, prepare another baking sheet for fried tortillas by lining with several layers of paper towels. Don’t turn off oven.
- Brown beef and onions in a large skillet, breaking up clumps of beef as you cook. When almost browned, add all seasonings and garlic and continue to cook until beef is completely cooked through.
- To serve tostadas, spread a generous amount of beef mixture over tostadas shells, sprinkle with cheese and top with lettuce, tomatoes, avocado crema/sour cream etc.

- In a large skillet, heat olive oil over medium heat. Stir in scallions and yellow pepper and start to cook 2 minutes. Add in ground beef and break apart in the pan as it browns. Once completely browned, stir in taco seasoning and water. Stir to incorporate and cook until most of the water has evaporated.
- To assemble, place tortilla rounds onto a serving platter. Spread about 1 tablespoon of refried beans onto each chip. Add 1 tablespoon of meat onto beans and press into the beans to help it stick. Top with grated cheese, diced tomato, sour cream and cilantro. Serve immediately.
