FLUFFY MINT DESSERT
The cool, minty flavor of this fluffy dessert is perfect for Christmas or the hot summer months. Since it has to be made ahead of time, it's a great time-saver on potluck day. I received the recipe from a neighbor a couple years ago. -Carol Mixter, Lincoln Park, Michigan

Steps:
- Reserve 1/4 cup of crushed cookies for garnish; set aside. Combine the remaining cookies with butter; press into an ungreased 13-in. x 9-in. dish. , Fold together the whipped topping, marshmallows and mints; pour over crust. Garnish with reserved cookies. Cover and refrigerate for 1-2 days before serving.

FLUFFY MINT DESSERT
My niece made this for a gathering I attended and I loved it. It is a very light, creamy dessert. It does need to made at least a day ahead of time so allow for that in your preparation. (The mints called for are sold under the name of "Melt Away Mints" at Hickory Farms but you can get them other places as well. There is a photo of them in the photo section of this recipe.)

MINT FLUFF
This recipe comes from a grandma that I never knew. Always brings back memories to her children. You could use the new Mint 'n Cream Oreos if you desire for an even more minty taste. Kids love this and I do too! Cooking time is chill time.

Steps:
- Crush Oreos.
- PLace 1/2 on the bottom of a 9X13 pan.
- Mix other ingredients and smooth on top of Oreos.
- Sprinkle remaining Oreos on top of cream mixture.
- Chill for 24 hours.

MINT CREME ANGLAISE
This is a creamy sauce used to decorate dessert plates, or as a side sauce. Especially good to dress up a chocolatey dessert.

Steps:
- Place egg yolks, vanilla, sugar and salt in a medium size metal or other heatproof bowl.
- Whisk together until well blended.
- Heat heavy cream, milk and 1 Tbls mint leaves in a medium size saucepan over medium heat until it JUST begins to simmer.
- (taste for mint flavor, and add more mint if needed; may take up to 3 tbls depending on strength of flavor desired) Temper the egg mixture by slowly whisking in about 1/3 of the hot cream mixture, adding it in a thin stream while whisking vigorously to avoid cooking the eggs.
- Then slowly add the egg/cream mixture back into the remainder of the heated cream, whisking to blend.
- Heat mixture over medium-low heat, stirring constantly with a spatula, until the anglaise coats the back of the spatula (just at 180F, but be very careful not to exceed 180F or mixture will curdle).
- Partially immerse pot in a bowl of ice water to stop cooking.
- Strain through a chinacap to remove most of the mint leaves.
- Chill immediately.
