FRUIT FOOL

For this dessert, most often I'll use apricot filling. But peach works just as well. On occasion, I have substituted apple or cherry filling, too.

BLACKBERRY FOOL

I strongly recommend using fresh blackberries in this recipe for best flavor. Raspberries, strawberries or a combination of all three may be used, but they should all be fresh.

Blackberry Fool image

Steps:

  • Pour the heavy cream into a large bowl with half of the confectioners' sugar and almond extract. Whip until stiff. Fold in sour cream. Refrigerate.
  • In a separate bowl, toss blackberries with the remaining confectioners' sugar. Let stand at room temperature for about 15 minutes.
  • In 8 parfait glasses, layer whipped cream and blackberries, beginning and ending with whipped cream. Garnish each parfait with a strip of lemon zest, a few blackberries and a sprig of mint.

MINT APPLE CRISP

In the early 1900s, New York state had more than one thousand stills on local farms. Then Prohibition started in 1920, spelling the legal end for the country's distilleries, both large and small. It took eighty-three years for a New York distillery to pick up the torch, but finally, in 2003, Tuthilltown Spirits launched, becoming New York's first small-batch whiskey distiller since the "Noble Experiment" put everyone out of business. When New York City bartenders Jim Meehan and Karen Fu set out to craft a cocktail that honors their home state, which happens to be the second largest producer of apples in the country, they reached for Tuthilltown's Heart of the Hudson vodka, made from apple cider from local orchards. Muddled Granny Smith apple plus fresh mint and saké give the drink a deliciously fresh, green-apple crispness.

Steps:

  • Muddle the apple slices and simple syrup in a mixing glass. Add the mint leaves and press lightly with the muddler. Add the vodka, saké, and ice, and stir until chilled. Double strain into a chilled coupe and garnish with the fanned apple slices.

APPLE MAPLE FOOL

Best made with a crisp & tart apple, like Granny Smith, if you know someone with a tree take some of theirs - they're generally not as sweet as the supermarket varieties. Brown sugar is to taste, but the maple syrup will make it sweeter. Cook time doesn't include chilling time.

Apple Maple Fool image

Steps:

  • Melt the butter in a small heavy saucepan and add the apples.
  • Bring to a slow heat, then add the brown sugar, cinnamon stick and lemon zest. Cook slowly until the apples are soft and breaking down (you don't want total mush though), stirring often so they don't stick to the bottom of the pan.
  • Cool a little, then add the 4T of maple syrup, stirring until it is soaked through. Put into the fridge to cool totally (remove cinnamon stick).
  • Whip the cream into soft peaks, then fold this through the apple mixture. Put into 6 individual dishes and chill.
  • Just before serving garnish with the extra maple syrup (I normally make a small indentation on the top of the fool & nestle approx 1 teaspoon of the syrup in that).

Steps:

  • Preheat the broiler. Place the pineapple slices on a foil-lined baking sheet and sprinkle with 1/4 cup of the sugar. Broil until the sugar is caramelized, about 10 to 15 minutes. Let cool and cut into small wedges.
  • In a medium metal bowl, whisk together the egg yolks and 6 tablespoons of the sugar until thick and pale yellow. Whisk in the water. Place the bowl over a pan of hot but not simmering water. Whisk constantly until the mixture is very thick and warm, about 10 minutes. Set aside to cool.
  • Whip the cream until soft peaks form. Add remaining 2 tablespoons of sugar and the vanilla extract and whip until firm. Stir a little of the egg mixture into the cream. Fold in remaining egg mixture.
  • Spoon a little of the custard into 6 narrow wine glasses. Top with a layer of pineapple, turning the pieces near the edge of the glass so that the caramelized side shows. Continue the layers, ending with the filling. Refrigerate for 2 hours before serving.
