EASY HAM CASSEROLE
This recipe is from my mom, who got it from my aunt. My aunt and I have unlimited access to pork because our husbands are both hog farmers and this is a great way to use up leftover ham. It's also a relatively quick meal to prepare.

Steps:
- Mix hashbrowns, ham, cheese and onion.
- In a separate bowl, combine Miracle Whip, milk, and pepper. Add to hashbrown mixture and mix lightly.
- Spoon into lightly greased 1 quart casserole dish.
- Combine crumbs and butter and sprinkle over hashbrown mix.
- Bake at 350F for 40 minutes.

BROCCOLI CHEESE CASSEROLE
Broccoli Cheese Casserole is the perfect side dish to any meal. Easy to prepare, tastes delicious and is a crowd pleaser! A family favorite recipe!

Steps:
- Preheat oven to 350*F
- Place broccoli in a steaming basket on stove and steam for 5 minutes or until broccoli is tender to a fork.
- Remove broccoli from stove and chop into bite sized pieces. Place into a medium size mixing bowl.
- Add to broccoli, soup, mayonnaise, butter, eggs, onion, salt and pepper. Mix well.
- Add 3/4 cup of cheese to broccoli mixture and mix well.
- Pour entire contents into an 8x8" square baking dish.
- Top with remaining 3/4 cup of cheese and Ritz crackers.
- Bake for 30 minutes or until cheese is melted and top is golden.

Steps:
- Preheat oven to 350°F. Spray 13x9 baking pan. Layer the chicken and broccoli.
- Mix the Miracle Whip and soup together in a small bowl. Pour over chicken and broccoli and using a knife cut through layers.
- Combine crumbs with margarine until well coated. Cover the casserole with crumb mixture.
- Cover with foil.
- Bake 45 minutes. Uncover and bake additional 15 minutes or until browned and bubbly.

- Make a sauce by melting butter in a medium saucepan. Whisk in the flour and milk. Cook and stir till thick and bubbly, then stir in the poultry seasoning, garlic powder, minced onion, salt, chicken base, and cheese. Cook and stir till cheese is melted. Remove from heat and stir in lemon juice and Miracle Whip. Set aside.
- Wash and chop broccoli. Spread in a greased 9x13 inch baking dish. Sprinkle with salt and pepper to taste. Spread cooked chicken evenly over the broccoli.
