BEST ANGEL FOOD CAKE
For our daughter's wedding, a friend made this lovely, angel food cake from a recipe she's used for decades. It really is one of the best angel food cake recipes I've found. Serve slices plain or dress them up with fresh fruit. -Marilyn Niemeyer, Doon, Iowa

- Place egg whites in a large bowl; let stand at room temperature 30 minutes. Sift 1/2 cup sugar and flour together twice; set aside. , Place oven rack in the lowest position. Preheat oven to 350°. Add cream of tartar, extracts and salt to egg whites; beat on medium speed until soft peaks form. Gradually add remaining sugar, about 2 tablespoons at a time, beating on high until stiff peaks form. Gradually fold in flour mixture, about 1/2 cup at a time., Gently spoon into an ungreased 10-in. tube pan. Cut through batter with a knife to remove air pockets. Bake until lightly browned and entire top appears dry, 35-40 minutes. Immediately invert pan; cool completely, about 1 hour. , Run a knife around side and center tube of pan. Remove cake to a serving plate.

This is the best cake ever!!! I like to make a frosting with equal parts Butter and Shortening and just enough Powder Sugar to make it thick. It is really yummy!!!!!

MISSIONARY CAKE AKA DEPRESSION CAKE

Steps:
- Preheat oven to 325 degrees. Line a 9x9 baking pan with foil, leaving an overhang.
- In medium sauscepan over medium high heat, combine water, raisins, brown sugar, vegetable oil and the spices. Bring to a boi and stirring constantly, boil for 3 minutes. Remove from heat and let cool 10 minutes. (I recommend cooling for a lot longer.)
- Meanwhile, mix the baking soda and salt in water and stir until completely dissolved. Combine four and baking powder and toss with fork to combine.
- After raisin mixture has cooled, add soda and salt mixture. It will bubble up so stir well. Add the flour mixturre and stir until a stiff dough has formed and raisins are well distributed. Spoon into prepared pan, smooth the top and bake 55 minutes.
- Remove cake from oven to cooling rack and let cool 5 minutes, then use overhang foil to remove cake from the pan and allow to cool completely.

Using a handheld or stand mixer fitted with a whisk attachment (or you can use a whisk) mix the oil, eggs, sour cream, buttermilk, and vanilla together until combined. Pour the wet ingredients into the dry ingredients, add the hot water or coffee, and whisk or beat it all until the batter is completely combined.
- Divide batter evenly between 3 pans. Bake for 21-25 minutes. Baking times vary, so keep an eye on yours. The cakes are done when a toothpick inserted in the center comes out clean.
