Homemade Dijonnaise image

Steps:

  • 1. In a small bowl, combine mayonnaise, mustard and lemon juice; stir until well blended. Add a tiny pinch sea salt and pepper; stir again. Taste and adjust if needed.
  • 2. Cover and refrigerate until needed. Makes ½ cup

2 Tbsp dijon mustard, or to taste
1/2 Tbsp freshly squeezed lemon juice
1 small pinch finely ground himalayan sea salt
1 small pinch white pepper

  • Place the cider vinegar, Dijon mustard, olive oil and sugar substitute into a jar with a tight fitting lid. Close the jar, and shake vigorously to blend. Refrigerate until chilled before using.

Steps:

  • Place egg, mustard, salt, cayenne pepper and 1/4 cup oil in blender and blend on low.
  • While the machine is blending, SLOWLY pour in another 1/2 cup oil.
  • You may have to stop and scrape down the mayo.
  • Add the lemon juice/vinegar and the remaining 1/2 cup oil.
  • Blend until well combined.

Delicious Homemade Dijon Mustard image

Steps:

  • In a non-stick saucepan combine the wine, onion and garlic; heat to boiling, simmer 5 minutes.
  • Cool, and discard solids.
  • Add the dry mustard to the cooked liquid, stirring constantly until smooth.
  • Blend in honey, oil and salt; heat slowly until thickened (keep nose away; fumes are strong!), stirring constantly.
  • Pour into a glass jar; cool, let sit on counter at room temperature overnight.
  • Refrigerate for 2-8 weeks to age flavor before using.

2 cups dry white wine
1 large onion, chopped
3 garlic cloves, minced
1 cup mustard powder (4 oz)
3 tablespoons honey
1 tablespoon vegetable oil or 1 tablespoon canola oil
2 teaspoons salt
