CHEESE CRISPS AND MOCK "GOLDFISH" CRACKERS
Try these cheese crisps as a great dip for low-carb salsa, and enjoy the Mock "Goldfish" Crackers as an anytime snack, great for the grab and go!

- Preheat oven to 400 degrees F.
- Stack the slices of American cheese and cut it into 16 small squares. Separate the pieces, and transfer them to a small bowl. Add the salt, chili powder, and garlic powder toss to combine. Arrange the 32 cheese pieces in 4 rows of 8, on a parchment paper-lined baking sheet, leaving as much space in between each as possible.
- Stack the Colby-Jack slices and cut them into about 24 small pieces. Arrange them on another parchment paper-lined baking sheet in 4 rows of 6¿without any seasonings.
- Bake both until well-browned and crispy, about 7 and 7 1/2 minutes. If undercooked, they'll be soggy, so don't be afraid to check them and put them back in for more time, if needed.
- Cool the crisps and crackers completely before serving¿as they cool, they'll crisp up. Store on the counter in an airtight container for a few days.

I'm not sure where my mom got this recipe, but she used to make it at least once a month. Although she never served it with gravy, I think peppered gravy would go great with this.

- In a medium bowl, mix together the ground beef, parsley, chili powder, salt, egg, and 1 cup of crushed saltine crackers. Form into 6 balls, then flatten into patties. Coat patties with remaining cracker crumbs, and place them on a plate. Refrigerate for at least 30 minutes.
- Heat the oil in a large skillet over medium heat. Fry patties for about 7 minutes per side, or until the centers are well done and the outside is golden brown.

- Preheat oven to 350 degrees.
- Place mounds of shredded cheddar cheese on non-stick cookie sheet.
- (about the size of a half dollar) Bake in oven for approx 3-5 minutes.
- The cheese will spread out into a lacy looking cracker.
- Remove to paper towels to cool.
- Store in airtight container.
- Top with salsa and sour cream for a nice taste or just eat plain!

Steps:
- Spread cereal in a large baking pan.
- Heat together the margarine, salad oil, syrup, sugar, soy sauce and Tabasco.
- Pour mixture over cereal and stir gently.
- Pour prepared sesame seeds and seaweed over the cereal and stir again.
- Bake at 325 degrees for 1 hour, stirring cereal every 15 minutes.
- Add more prepared sesame seeds and seaweed if desired.

- Cut kirimochi into small pieces and ⅛ inch (3 mm) thickness. Lay the mochi pieces in a single layer on a flat tray or wire rack.
