  • In a 3-qt. slow cooker, combine the chicken, gravy, milk, mushrooms, chilies and dressing mix. Cover and cook on low for 4-5 hours or until chicken is tender., Stir in cream cheese; cover and cook 15 minutes longer or until cheese is melted.

Skillet Chicken with Roasted Garlic and Mushroom Gravy image

Steps:

  • Heat oven to 350°F.
  • Cut 1/4 to 1/2 inch from top of each garlic bulb to expose cloves. Place each cut side up on 12-inch square of foil. Drizzle each bulb with 1 teaspoon of the oil. Wrap securely in foil. Place in pie plate or shallow baking pan. Bake 45 to 50 minutes or until garlic is tender when pierced with toothpick or fork. Cool slightly. From root end, squeeze soft cloves out of papery skins, and chop finely. Set aside.
  • Meanwhile, between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick. In shallow pan, stir together flour, thyme, salt and pepper. Reserve 3 tablespoons of the seasoned flour for the sauce. Coat both sides of chicken with remaining flour mixture.
  • In 12-inch skillet, heat 2 tablespoons of the butter over medium-high heat. Cook chicken in butter 6 to 8 minutes, turning once, until no longer pink in center (at least 165°F). Transfer chicken to plate; cover to keep warm.
  • In same skillet, heat remaining 2 tablespoons butter over medium heat. Cook mushrooms in butter until lightly browned. Sprinkle the 3 tablespoons reserved seasoned flour over mushrooms. Cook and stir 2 minutes. Stir in chicken broth, cream and roasted garlic. Heat to boiling. Reduce heat to low; simmer about 3 minutes or until slightly thickened.
  • Place chicken back into skillet with sauce about 1 minute or until heated through. Serve with mashed potatoes, if desired.

Mom's Chicken Breasts with Mushroom Gravy image

Steps:

  • 1. Melt 2 tablespoons butter in large skillet over medium heat. Add chicken breasts; cook chicken 12 to 15 minutes or until fork tender and juices run clear, turning once. Remove chicken from skillet; keep warm.
  • 2. Melt 2 tablespoons butter in same skillet; add mushrooms and onion. Cook until vegetables are tender, stirring occasionally. Season with salt and pepper. Add sherry; bring to a boil. In small bowl, combine milk and cornstarch; blend well. Add to mushroom mixture; cook until mixture thickens and boils.
  • 3. Serve over chicken. Makes 4 servings.

Steps:

  • Blend flour, 1/2 teaspoon thyme and allspice in small bowl.
  • Set aside 1 tablespoon of flour mixture.
  • Sprinkle chicken with salt and pepper, then with enough of remaining flour mixture to coat.
  • Melt butter in heavy large skillet over medium-high heat.
  • Add chicken to skillet.
  • Saute until brown, about 4 minutes per side.
  • Transfer chicken to plate.
  • Add mushrooms, onion, and remaining 1 teaspoon thyme to skillet.
  • Saute until mushrooms are brown, about 5 minutes.
  • Mix in reserved 1 tablespoon flour mixture; cook 1 minute.
  • Add cream and broth and bring to boil, stirring occasionally.
  • Return chicken and any collected juices to skillet.
  • Reduce heat to medium-low; simmer uncovered until chicken is cooked through and gravy thickens slightly, about 5 minutes.
  • Season with salt and pepper.

  • Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick.
  • In shallow dish, stir 1/2 cup Bisquick mix and the garlic powder. In another shallow dish, beat egg. Dip chicken in egg, then coat with Bisquick mixture.

Steps:

  • Sprinkle both sides of the chicken breasts with onion powder, salt, and pepper.
  • Heat oil in a large skillet over medium-high heat. Add chicken and cook until golden brown, about 5 minutes per side.

If you don't like sour cream, don't be afraid of it, you can hardly taste it as sour cream! We like this with steamed rice, and broccoli goes well with it, or most any green vegatable.

Chicken Breast With Green Onion and Mushroom Gravy image

Steps:

  • Pound the chicken breasts to an even thickness, about 1/2 inch thick. Best suggestion: place one breast at a time into a quart freezer bag, this keeps chicken juice from flying all over your kitchen!
  • Cut green onions into 1 inch lengths at the green and thin slices in the white section. Clean and slice the mushrooms.
  • Melt the butter in a large, deep-sided fry-pan. Saute the onions and mushrooms until just soft. Using a slotted spoon, remove vegetables and set aside.
  • Combine flour, salt and pepper into a pie tin or similar. Rinse the prepared chicken breasts, then cover with flour. Place in the butter in the fry-pan. Cook on medium heat for about 5 minutes per side. They should be just done--juicy but no pink in the middle. Scoot chicken to side of pan, or remove if necessary.
  • Add enough of the remaining flour mixture to soak up the drippings in the pan, and create a loose paste, use a whisk to stir and cook for 1 minute.
  • Slowly add the chicken broth (from granules, a can or whatever, is fine!) Stir until well combined; add cream of mushroom soup and stir until well combined; return chicken to the pan. Simmer for about 5 minutes, until the gravy starts to thicken. Add a cold water/corn starch mixture if the gravy doesn't thicken. Return the vegatables to the gravy.
  • Add the sour cream; cook, stiring constantly, until the sour cream is completely mixed in and warmed.
  • Serving suggestion: serve over steamed rice.

Steps:

  • Make chicken:
  • Soak chicken in milk to cover for 20 to 30 minutes. Spray a baking dish (one that will accommodate all the chicken pieces comfortably in one layer) with nonstick vegetable-oil spray.
  • Preheat oven to 400°F. Put the butter in the baking dish and heat it in the oven until the butter melts. Mix flour and seasonings together in paper sack or plastic baggie (1-gallon size). Shake each piece of chicken in seasoned flour. Place chicken pieces, skin-side down, in baking dish. Bake for 20 minutes. Turn chicken over and bake an additional 20 minutes or until cooked through and crispy. Remove chicken and set aside in a warm place.
  • Make gravy:
  • Sauté the scallions and mushrooms in the drippings over medium high heat, until soft. Mix the seasoned flour with milk first until you see no lumps. Whisk milk mixture into the sautéing onions and mushrooms. Taste and add bouillon cube, if desired (You may want to use additional milk if you do). Boil until thickened to preferred consistency. Put into a gravy dish and serve alongside the baked chicken.
