FIRE-AND-ICE SALAD
This recipe gets its unique name from the combination of cool crisp vegetables and the spicy jalapeno and dressing. Folks I serve it to agree this is the best cucumber salad that they've ever tasted.

Steps:
- In a large bowl, combine tomatoes, green pepper, jalapeno and onion; set aside. Combine the next seven ingredients in a saucepan; bring to a boil and boil for 1 minute. Pour over vegetables. Let stand until mixture comes to room temperature. Stir in cucumbers. Refrigerate for 2 hours. Drain before serving.

- Combine the romaine, tomatoes, cucumber and onions in a large bowl.
- Whisk the olive oil, vinegar, sour cream, oregano and garlic in a small bowl to make the vinaigrette.
- Pour the vinaigrette over the salad, season with salt and pepper and toss to combine. Serve with more freshly cracked black pepper over the top.

- 1. ALTERNATE: You can substitute cherry tomatoes in lieu of regular tomatoes. If you do, it is not necessary to peel them, just cut them in half and add to the mix.
- 2. Place prepared tomatoes, bell peppers, onion, and cucumber in a large bowl. Hand toss to combine ingredients.
- 3. Combine vinegar, celery salt, mustard seed, sugar, red pepper, black pepper, salt, and water in a saucepan and bring to a boil. Allow to boil for 1 minute; remove from heat.
- 4. While liquid is still hot, pour over vegetables. Chill for several hours or overnight.

Steps:
- Beat cream cheese in a large mixing bowl using an electric mixer until fluffy. Add sour cream, sugar, and salt; mix well.
- Drain pineapple, reserving the juice. Dip banana pieces into the pineapple juice and place in a bowl. Add cherries, oranges, and the pineapple.
- Add marshmallows to the cream cheese mixture; fold in the fruit mixture. Grease a fluted tube pan with cooking spray and turn the fruit salad out into the pan.
- Cover and freeze salad for at least 8 hours. Unmold and let stand at room temperature at least 10 minutes before cutting.
