QUICK 'N' EASY LASAGNA

"I never have leftovers when I prepare this hearty crowd-pleaser," notes Brenda Richardson, Rison, Arkansas. "It's my son's favorite, and my husband and I like to make it on nights we have friends over to play cards."

Quick 'n' Easy Lasagna image

Steps:

  • Cook noodles according to package directions. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Add spaghetti sauce; heat through. Rinse and drain the noodles., In a greased 13-in. x 9-in. baking dish, layer a third of the meat sauce and half of the noodles and cheese. Repeat layers. Top with remaining meat sauce. , Cover and bake at 350° for 35 minutes or until bubbly.

Steps:

  • Preheat the oven to 350 degrees.
  • Brown the meat and drain the fat.
  • Mix the sauce with the meat and heat.
  • In bowl, mix the sour cream and the cottage cheese.
  • Take 9x13" pan and put a layer of sauce in it.
  • Top with some noodles.
  • Top with half of the mixed sour cream and cottage cheese.
  • Sprinkle with half of the mozzerella.
  • Repeat the layers and then top with the remaining meat sauce.
  • Bake covered with foil for 1 hour.

  • In a large skillet over medium-high brown meat in 1 tablespoon olive oil while breaking meat apart. Add minced onion and garlic and cook 2 additional minutes. Add cans of diced tomatoes, tomato sauce, tomato paste, and water; stir. Add in seasoning an mix thoroughly. Allow sauce to simmer over low-medium heat.
  • In a 9x13 pan ladle in about 2 cups of sauce. Add oven ready lasagna noodles to cover meat sauce. Pasta should form a single layer (you can break the noodles if you like). Dollup cheese mixture on top of noodles and spread with a spoon. Repeat above twice so you have 3 layers finishing with a cheese layer. Now sprinkle the casserole with an additional 1-2 cups mozzarella.
  • Top casserole with foil. Cook covered for 50 minutes. Remove foil and allow it to brown lightly for 10 minutes. Remove from the oven and allow to sit 10 minutes before serving. Cut into 16 pieces. Serve with garlic bread and side salad.
