Freshly baked dinner rolls are always tasty and this recipe makes an excellent dough. These are tender, fluffy yeast rolls. Or, you can smear the dough with softened butter, cinnamon, and sugar to make yummy cinnamon rolls. It's a classic recipe you'll use over and over. Mom's Dinner Rolls image

Steps:

  • 1. In a large mixing bowl, proof yeast in the 1/2 cup lukewarm water, with half the sugar dissolved in it.
  • 2. In a 2-cup measuring cup, heat the milk and butter together until the butter is melted.
  • 3. When the yeast is bubbly, add 1 cup flour and beat well.
  • 4. Then add eggs, salt, and another cup flour. Beat well.
  • 5. Last, add the warm milk and butter, remaining sugar, then 3 cups flour and mix by hand; gradually adding another cup of flour.
  • 6. Turn out onto silicone mat or floured surface and knead until you have worked in the flour.
  • 7. Work until the dough is only slightly sticky.
  • 8. Set in a warmed oven covered by a tea towel, to rise.
  • 9. When the dough is doubled in size, remove from oven.
  • 10. Using two 9x13" pans, form dough into dinner roll shapes and place dough into the pans (20 per pan).
  • 11. When rolls have doubled in size, bake in a 375 F preheated oven for 13- 15 min.
  • 12. When out of the oven, brush with melted butter.

1 stick butter
1/2 c water (very warm)
1 1/2 Tbsp active dry yeast
1/2 c sugar
2 eggs
2 tsp salt
5 1/2 -6 c bread flour
2 Tbsp melted butter (for brushing on baked rolls)

School Cafeteria Hot Rolls image

Steps:

  • Dissolve yeast in warm water in a mixing bowl. Let stand until yeast is frothy, about 5 minutes.
  • Add 2 cups flour, sugar, and salt to the yeast mixture. Beat with an electric mixer for 2 minutes. Add shortening and eggs; beat for 2 minutes more. Slowly add remaining flour and mix well. Let dough rise in a warm place, undisturbed, until doubled in size, about 1 hour.
  • Punch down dough and divide into 42 pieces. Shape each piece into a ball and arrange on a rimmed baking sheet. Let rolls rise in a warm spot, undisturbed, until doubled in size, about 1 hour.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until golden brown, 25 to 30 minutes. Remove from the oven and gently brush tops with butter.

Mom's Good Cinnamon Rolls image

Steps:

  • In a large mixing bowl, dissolve yeast and 1/3 cup sugar in warm water. Stir in salt and 2 cups flour. Beat mixture for 2 minutes. Beat in eggs and oil. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition.
  • When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 5 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 40 minutes. In a small bowl, stir together 1/2 cup sugar and 2 teaspoons cinnamon; set aside.
  • Divide the dough into twelve equal pieces. Take each piece of dough, roll into a log and roll in cinnamon sugar mixture. Place the knots in a lightly greased 9x13 inch baking pan. Cover the rolls with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  • Bake in preheated oven for 30 minutes, until golden.

Steps:

  • Melt margarine in hot water. Add sugar and salt and stir. Add cold water and yeast. Stir to dissolve yeast.
  • Add 3 cups flour and mix. Add eggs and 2 1/2 - 3 cups more flour. Mix, cover and let rise until dough doubles in size.
  • Punch down and let rise 30 more minutes or until doubles.
  • Make walnut size balls of dough. Place about 2 inches apart in well-buttered 9 x 13 inch pan. Bake in a preheated 350 degrees F (175 degrees C) oven for 30-45 minutes. Brush top of rolls with margarine while hot.

MOM'S CABBAGE ROLLS

My mom made the best Ukrainian cabbage rolls, simply filled with rice and bacon and cooked in a tomato sauce. This recipe is the closest I could find to hers.

Mom's Cabbage Rolls image

Steps:

  • With a large, sharp knife, cut out the core from the cabbage.
  • Place the cabbage in a deep pot and pour boiling water into the core until the cabbage is completely covered.
  • Let stand until the outer leaves can be separated, then parboil or steam the leaves just until soft and pliable.
  • Continue with the remainder of the cabbage.
  • In a saucepan, bring 2 cups of water to a boil; add the rice.
  • Reduce the heat to low and cook, covered, for 15 minutes; drain.
  • Meanwhile, in a separate saucepan, cook the bacon over medium heat until all the fat is drawn out.
  • Add the onions; cook until lightly browned.
  • Add to the cooked rice; season with salt to taste.
  • Line a roasting pan with the outer cabbage leaves.
  • Place a spoonful of the rice mixture onto each inner cabbage leaf; roll up, tucking in the ends, and place in the pan.
  • If necessary, trim out the centre rib of the leaf to make rolling easier.
  • Pour tomato juice over the cabbage rolls.
  • Cover with more cabbage leaves.
  • Cover and bake in a 350 degree F oven for 1-1/2 to 2 hours or until tender.

Steps:

  • *If using a standard Kitchen Aid type mixer, half the recipe and prepare in two batches so as not to overflow the mixer Dissolve yeast in 1/2 cup warm water. Scald milk and cool. Combine eggs, oil, sugar and salt. Once milk cools, add to mixture and add all other ingredients. Let rise in greased and covered bowl on top of warm oven for 15 minutes. Pinch off handfuls of dough and place on greased backing sheet. Allow to rise for another 30-45 minutes. When they rise, bake @ 350 degrees for 35-45 minutes until brown. Brush with melted butter.
