MY MOM'S SPINACH MEATBALLS

Growing up in the country we always had a garden. My mom was a great cook and got us to eat our veggies. So here is one of our favorite recipies that I make for my son.

Steps:

  • 1. cook spinach let cool.mix ground beef,eggs,spinach,garlic,cheese,breadcrumbs. roll into small appertizer size meatballs. Fry until golden brown. remove meatballs from fry pan and put into slow cooker add your favorite sauce. cook on high for about 5-6 hours.....enjoy

1 lb ground beef
2 eggs
2 c cooked spinach
2 clove minced garlic
1/2 c italian cheese-romano
1/2 c seasoned bread crumbs
salt and pepper to taste

Store-bought dough, plenty of fresh spinach, and meatballs and sauce reserved from 30-Minute Spaghetti and Meatballs make this an easy, winning meal.

Spinach and Meatball Calzones image

Steps:

  • Preheat oven to 450 degrees. Lightly oil a rimmed baking sheet. In a large saucepan, bring 1/2 cup water to a simmer. Add spinach and season with salt; cover and cook until wilted, about 2 minutes. Transfer spinach to a fine-mesh sieve and drain, pressing with a rubber spatula to release as much liquid as possible. Transfer spinach to a cutting board and roughly chop.
  • On a lightly floured work surface, roll each piece of dough into an 8-inch round. In a medium bowl, stir together spinach, reserved meatballs and sauce, cheese, and red-pepper flakes (if using). Season with salt and pepper. With a slotted spoon, divide mixture among bottom halves of dough rounds, leaving a 1-inch border. Fold top half of each round over filling and roll and pinch edges to seal. Carefully transfer calzones to baking sheet. Brush tops lightly with oil and season with salt and pepper. Bake until calzones are golden brown, 15 to 18 minutes.

8 meatballs, halved, and 1 1/2 cups sauce reserved from 30-Minute Spaghetti and Meatballs
8 ounces fresh mozzarella, torn into pieces
1/2 teaspoon red-pepper flakes (optional)

  • Defrost the spinach and squeeze out all the excess moisture using cheesecloth or a paper towel. Make sure to really squeeze out the moisture because too much moisture will cause the meatballs to crumble.
  • Combine the ground beef, spinach, onion, garlic, egg, salt, pepper, basil, and oregano with your hands until just mixed.
  • Roll out the meatballs, 4 per serving (so 16 total for 4 servings), and place on a prepared baking sheet. Bake for 18-20 minutes until cooked through.
