'SLIME-FILLED' MONSTER CUPCAKES

Bite into this 'Slime-Filled' Monster Cupcake recipe from My Food and Family. Vanilla pudding treated with food coloring makes the perfect 'slime' filling.

'Slime-Filled' Monster Cupcakes image

Steps:

  • Heat oven to 350°F.
  • Prepare cake batter and bake as directed on package for 24 cupcakes. Cool in pans 10 min. Remove from pans to wire racks; cool completely.
  • Meanwhile, beat pudding mix and milk with whisk 2 min. Stir in 3 or 4 drops green food coloring; spoon into pastry bag fitted with round tip. Refrigerate until ready to use as directed.
  • Cut cone-shape piece from top of each cupcake; set aside. Pipe pudding into cupcakes, adding about 1 Tbsp. to each. Replace cupcake tops.
  • Spoon frosting into medium bowl; stir in remaining food coloring. Add COOL WHIP; whisk until blended. Spread onto cupcakes. Decorate with remaining ingredients as shown in photo.

1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
1 cup cold milk
4 to 6 drops green food coloring, divided
1 container (16 oz.) ready-to-spread vanilla frosting
1 cup thawed COOL WHIP Whipped Topping
24 JET-PUFFED Marshmallows, cut in half
48 green candy-coated chocolate pieces (about 1/2 cup)
24 blue candy-coated chocolate pieces (about 1/4 cup)
24 miniature taffy candies

S'MORES MONSTER CUPCAKES

Chocolate cupcake, marshmallow frosting and a graham cracker cookie topper make the perfect s'mores combination. Add in the monster decorations, and you have yourself a real "s'monster" treat.

S'mores Monster Cupcakes image

Steps:

  • For the cupcakes: Preheat the oven to 350 degrees F. Line a 12-cup muffin tin with black cupcake liners.
  • Mix the flour, baking soda and salt in a medium bowl. Microwave the milk in a large microwave-safe bowl until bubbling, about 1 minute. Whisk in the cocoa until dissolved. Whisk in the granulated sugar, oil, vanilla and egg until smooth. Fold in the flour mixture until combined.
  • Divide the batter among the cupcake liners (about 1/4 cup per liner). Bake until a toothpick inserted in the center comes out clean, 15 to 18 minutes. Let the cupcakes cool in the pan for 10 minutes, then remove to a wire rack to cool completely, about 1 hour.
  • For the frosting: Meanwhile, beat the butter in a stand mixer fitted with a paddle attachment on medium-high speed until light, fluffy and almost double in size, 4 to 5 minutes. Turn the mixer to low, add the marshmallow creme and confectioners' sugar and beat until just combined, about 1 minute.
  • Divide the frosting into 5 separate bowls. Color one bowl with purple gel food coloring, one bowl with orange gel food coloring, one bowl with neon green gel food coloring, one bowl with blue gel food coloring and one with black. Spoon into 5 separate piping bags fitted with small star tips (we used a size 15 tip).
  • For the decorations: Pipe monster faces and hair on top of the chocolate-covered graham cookies. Decorate with candy eyes. Use the remaining frosting to pipe on top of the cupcakes. Place one decorated cookie on top of each cupcake.

12 chocolate-covered graham cracker cookies

  • Prepare cake mix batter according to package directions; fill 24 paper-lined muffin cups. Bake at 375° for 20-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks to cool completely., For filling, cream the shortening, butter, confectioners' sugar, milk and food coloring until light and fluffy. Cut a small hole in the corner of a pastry or plastic bag; insert #7 round tip. Add filling. Push the tip through the bottoms of paper liners to fill cupcakes (the top of the cupcakes will begin to expand when they are full)., In a small bowl, combine the frosting ingredients; frost cupcakes. Combine glaze ingredients; drizzle over frosting.

  • Heat oven to 375°F. Place paper baking cup in each of 24 regular-size muffin cups. Make and bake cake mix as directed on box for cupcakes. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 30 minutes.

Steps:

  • Prepare cake batter and bake as directed on package for 24 cupcakes; cool completely.
  • Spoon 1/3 cup COOL WHIP into large resealable plastic bag. Add marshmallows; seal bag. Shake until marshmallows are evenly coated. Place decorating sugar in small bowl. Add marshmallows, 1 at a time; toss until evenly coated with sugar. Place in single layer on baking sheet. Decorate with decorating gel to resemble monster faces as shown in photo.
  • Beat pudding mix and milk in medium bowl with whisk 2 min. Stir in remaining COOL WHIP. Spoon 1-1/2 cups pudding mixture into small bowl. Add food coloring; stir until blended. Spoon into small resealable plastic bag. Snip one corner off bottom of bag.
  • Cut 1-inch piece from top of each cupcake with small knife; remove and reserve for snacking or other use. Pipe pudding mixture from bag into holes in cupcakes; spread remaining pudding mixture onto tops of cupcakes. Top with marshmallows.
