MOROCCAN SEMOLINA SOUP WITH MILK, ANISE SEEDS, AND HONEY

This simple Moroccan soup is easy to prepare and can be served in the evening or as a breakfast porridge. Serve warm, garnished with cinnamon, with honey for sweetening on the side.

Steps:

  • Bring water to a boil in a saucepan and stir in semolina and salt. Simmer gently, stirring frequently, until semolina is tender and mixture is very thick, 10 to 15 minutes. Stir in milk, butter, and anise seed; simmer until soup reaches desired consistency, 5 to 10 minutes.

It's incredible hard for me to get lamb here so I made this soup using chicken and was very pleased with it. It's quite hearty and aside from being delicious it will keep you going for a long time.

Moroccan Soup to Fill the Tummy image

Steps:

  • Put the lamb, spices, butter, celery, onion, and parsley/cilantro in a large soup pot and stir over a low heat for 5 minutes.
  • Add the tomato pieces, and continue cooking for 10-15 minutes.
  • Salt lightly.
  • Add the juice from the tomatoes, 7 cups of water, and the lentils.
  • Bring to a boil, then reduce heat, partially cover, and simmer for 2 hours.
  • When ready to serve, add the chickpeas and noodles and cook for 5 minutes.
  • Then, with the soup at a steady simmer, stir the lemony eggs into the stock with a long wooden spoon.
  • Continue stirring slowly, to create long egg strands and to thicken the soup.
  • Season to taste. ladle into bowls and dust with cinnamon.
  • Then there's always those little bowls of extra lemon juice for you inveterate sour pusses.

Steps:

  • Heat the oil in a large non-stick sauté pan over a medium heat and fry the onions and garlic until starting to soften. Tip in the spices and chilli, stir briefly, then pour in the passata and stock. Add the lentils, carrots, sweet potato and celery, and bring to the boil.
  • Cover the pan and leave to simmer for 30 mins, then cook uncovered for a further 5-10 mins until the vegetables and lentils are tender. Stir in the chopped coriander and serve in bowls with lemon wedges for squeezing over, and the reserved coriander sprinkled over.

Steps:

  • In large pot saute; the onions, garlic, and ginger in a little olive oil for about 5 minutes.
  • Add the water, lentils, chick peas, white kidney beans, diced tomatoes, carrots, celery, garam masala, cardamom, cayenne pepper and cumin. Bring to a boil for a few minutes then simmer for 1 to 1 1/2 hours or longer, until the lentils are soft.
  • Puree half the soup in a food processor or blender. Return the pureed soup to the pot, stir and enjoy!

Steps:

  • Stir beef stock and lentils together in a large pot; bring to a boil, reduce heat to low, and keep at a simmer while preparing onion.

Steps:

  • Cook lentils in pot of boiling salted water for 2 minutes. Drain.
  • Heat oil in large pot over medium heat. Add onion, parsley, cilantro, ginger, and cinnamon. Saute 5 minutes or until onion is soft.
  • Stir in tomatoes and saute 5 minutes more.
  • Stir in broth, chickpeas, lentils, reserved tomato liquid, and 3 cups water.
  • Season with salt and pepper and bring to a boil.
  • Reduce heat to medium-low and simmer 45 minutes or until lentils are tender, stirring occassionally.
  • In separate bowl, whisk flour with 1 cup water.
  • Whisk in cilantro, lemon juice and tomato paste.

  • Cook for 5 minutes or until orzo is soft.
