MOURAD LAHLOU'S PRESERVED LEMONS

Preserved lemons -- pickled in a brine of lemon juice and salt -- are important ingredients in Moroccan cuisine. Use them in chef Mourad Lahlou's Chicken Legs recipe from "Mourad: New Moroccan."

Steps:

  • Place salt in a large bowl; set aside. Stand lemon on its stem end on a cutting board; cut down the center as though you were going to cut in half, but stop about 1/2 inch above the stem. Make a perpendicular cut, stopping about 1/2 inch above the stem, so the lemon is quartered but still in tact.
  • Holding lemon over bowl of salt, spread four quarters open and pack as much salt as you can, allowing excess to fall back into bowl. You should be able to pack about 2 tablespoons into lemon. Place lemon, cut side up, in a 1-quart sterile, dry glass jar, preferably with a neck that is narrower than the jar, with a lid or a clamp closure. Repeat process with as many lemons as the jar will hold (you may have to add some the next day when lemons are softer). Cover and let stand overnight.
  • Push lemons down with a clean spoon, add remaining lemons, if necessary, keeping in mind you may only be able to add another half or quarter. Add enough lemon juice to jar to completely submerge lemons. Cover with lid until just finger-tight or clamp closed. Place jar in a dark spot, but not the refrigerator.
  • Everyday, for the next week, turn and shake jar once a day to redistribute salt. Add more lemon juice if lemons are no longer submerged. Let lemons stand for 1 month before using.

Roast Chicken with Preserved Lemons and Root Vegetables image

Steps:

  • Make the brine: Fill a large stockpot with 16 cups water; bring to a simmer over medium-high heat. Add sugar, salt, lemons, olives and their brine, parsley, garlic, peppercorns, thyme, and bay leaves; stir to dissolve sugar and salt. Remove from heat and let stand for 20 minutes to infuse.
  • Add ice to brine mixture to cool. If brine is not completely cold, transfer to refrigerator until cold. Add chickens to cold brine and weight down with a plate or small pot lid to keep submerged. Transfer to refrigerator and let brine 8 to 12 hours.
  • Make the chicken: Cut preserved lemons into quarters. Cut flesh away from rinds, reserving both. Remove chicken from brine; discard brine. Rinse chickens and pat dry using paper towels. Place 1 chicken on work surface with legs facing you. Starting at the cavity, work the handle of a wooden spoon between skin and one breast to create a pocket, working slowly and gently to avoid tearing skin. Repeat process with other side.
  • Holding chicken in place with one hand, slide index and middle fingers of your other hand into each pocket to enlarge it, then slide your fingers down to create a pocket over the thigh. Repeat entire process with second chicken.
  • Insert pieces of preserved lemon rind, white pith-side down, and thyme sprigs into pockets over thighs and breasts. Sprinkle cavities with salt and rub chickens with reserved flesh from preserved lemons, scraping off any pieces of lemon flesh that stick to the chicken and discard.
  • Position 1 chicken, breast side up, with legs facing you. Cut a vertical slit in one side, about 1 inch back from cavity, alongside thigh. Cross end of opposite drumstick over drumstick on this side and poke top end of drumstick through slit. Depending on condition of chicken's skin, it may rip as you try to poke the drumstick through it, so have some kitchen twine on hand just in case to tie legs together if necessary. Repeat process with other chicken. Season chickens with salt.
  • Preheat oven to 500 degrees.
  • Make the vegetables: Place turnips, carrots, onions, parsnips, and rutabagas in a large bowl; add olive oil, thyme, garlic, and 3 pinches salt. Toss to combine. Transfer vegetables to a large roasting pan spreading in an even layer. Set a roasting rack over vegetables. Place chickens, breast-side up on roasting rack, leaving space between chickens. Chickens should not be touching vegetables, but set over them.
  • Transfer roasting pan to oven; roast for 15 minutes. Spread room-temperature butter from remaining chicken ingredients over the breasts; continue roasting 30 minutes more. Roast until skin is deep golden brown and an instant-read thermometer inserted into thickest part of thigh reaches 160 degrees, 15 to 20 minutes more. Transfer chicken to a cutting board and let stand 20 minutes.
  • Meanwhile, remove rack and set roasting pan on stove over two burners. Bring cooking liquid to a simmer. Whisk in preserved lemon liquid and simmer for 2 minutes. Stir in butter, piece by piece, to emulsify sauce and glaze vegetables. Stir in parsley. Serve chickens whole or carved over vegetables.

1 cup cracked green olives in brine
12 flat-leaf parsley sprigs
3 tablespoons sliced garlic
1 tablespoon Tellicherry peppercorns
8 sprigs fresh thyme
10 bay leaves
16 cups ice cubes
2 (3 1/2-pound) chickens, trimmed of excess fat
12 medium turnips, peeled and halved lengthwise
12 medium carrots, peeled and cut into 1 1/2-inch pieces
8 cipollini onions, about 1 1/2 inches in diameter, peeled and root ends trimmed
4 small parsnips, peeled and cut into 1 1/2-inch pieces
3 small rutabagas, peeled and quartered lengthwise
2 tablespoons extra-virgin olive oil
2 teaspoons coarsely chopped fresh thyme
18 cloves garlic
Coarse salt
1 tablespoon preserved lemon liquid
2 tablespoons cold unsalted butter, cut into pieces
2 teaspoons chopped flat-leaf parsley

Chicken Legs, Preserved Lemons, and Green Olives image

Steps:

  • Generously salt chicken legs on all sides. Let stand at room temperature for 1 hour.
  • Heat 1 tablespoon fat in the bottom of a stainless steel tagine over medium-high heat. Add 3 of the chicken legs and cook, turning once, 3 to 4 minutes on all sides, until well browned. Remove legs from pan and repeat process with remaining 3 chicken legs. Remove from pan and set aside.
  • Discard all but 2 tablespoons fat from tagine. If fat is burnt, discard and add remaining 2 tablespoons. Place tagine over medium-high heat, stirring often and adjusting heat as necessary, until rich golden brown, about 15 minutes.
  • Meanwhile, remove all racks from oven except for bottom rack so that tagine will fit. Preheat oven to 350 degrees.
  • Add coriander, white pepper, ginger, saffron, and turmeric to tagine; cook, stirring constantly, until spices are lightly toasted, about 1 1/2 minutes. Return chicken legs to tagine; add chicken stock and bring to a boil. Cover tagine and transfer to oven; cook until chicken is tender and beginning to pull away from ends of drumsticks, about 40 minutes.
  • Remove chicken legs from tagine and set aside. Return tagine to stove and simmer over medium-high heat until liquid is thick enough to coat the back of a spoon, about 3 minutes. Season with salt. Add lemons and olive; cook until heated through. Whisk in butter and herbs.
  • Arrange chicken legs on a platter and spoon sauce over them; serve immediately.
