SHRIMP MOZAMBIQUE
This shrimp Mozambique recipe was passed down from my grandma and is frequently made in our Portuguese culture. Variations include adding other seafood, such as clams, mussels or scallops. I've also made it with chicken since my kids will not eat seafood. -Christina Souza, Brooksville, Florida

Steps:
- In a Dutch oven, heat oil over medium-high heat. Add onion; cook and stir until tender, 4-5 minutes. Add garlic and shrimp; cook 1 minute longer. Stir in seasonings. Add beer and lemon juice; bring to a boil. Reduce heat. Simmer, uncovered, until shrimp turn pink, 10-15 minutes. Stir in ketchup and parsley; discard bay leaf. Serve with rice.

Steps:
- Preheat broiler.
- In a shallow bowl, combine the first 7 ingredients and mix well.
- Marinate for 30-60 minutes in refrigerator.
- Broil steaks 4-5 inches from the heat at about 4 minutes each side, or until fish flakes easily with a fork.
BAKED BLACK TIP SHARK STEAKS
My Grandmother went to a seminar this morning and I KNEW she'd be FAMISHED when she returned. I decided to prepare lunch for her, in advance of her return. A little Asian/Ecuadoran #FUSION!!!!!!!!!!!!!! Baked Ecuadoran Black Tip Shark fillets, with potato, stewed tomato, lime, and onion; Edamame bowls. Blackberry/Raspberry/Blueberry compote over vanilla bean Ice Cream to finish.

Steps:
- Preheat oven to 375°.
- In large glass, rectangular, baking dish, place 6 pats of butter in two lines of three pats each, across the pan.
- Wash, and slice the potato into 1/2 inch slices.
- Lay the potatoes in a single layer between the butter, or on top.
- Sprinkle 1/3 of the ground peppercorns.
- Slice the onion into 1/2 inch rings, and push rings loose and lay on top of potatoes.
- Season lightly with Weber's seasoning.
- Place shark steaks in the center of the baking dish, on top of the potatoes and onions.
- Season lightly with peppercorns, and seasoning mix.
- Squeeze the juice of 1/2 lime, over everything in the dish.
- Add Shiraz wine.
- Place, uncovered, into the preheated oven, and set a timer for 40 minutes.
- Five to 10 minutes prior to the fish timer ending, steam, or microwave, the Edamame, then sprinkle the pods lightly with sea salt, and keep them warm.
- Plate and serve immediately.
- Serve with Shiraz, or Chardonnay and a Baguette and butter.

- To make the sauce, combine the lemon juice, brandy, mayonnaise, ginger and garlic in a mixing bowl. Set aside.
- To make the fish spice, combine the salt, coriander, and black pepper in a small mixing bowl. Set aside but keep within reach.
- In a saute pan, add the olive oil. When the oil is hot, add the shark. Season each piece with the fish spice and continue to pan fry.
- Once each piece is crispy on one side, turn over and repeat seasoning procedure.
- Add the sauce to the pan and begin to reduce.
- Add the cinnamon and garlic. When the sauce is brown and thick and the shark is thoroughly cooked, remove the pan from the burner.
- Place shark onto each plate and spoon over the brown sauce. Garnish with chopped parsley and serve.

- Combine soy sauce, orange juice, catsup, chopped parsley, lemon juice, pepper, and minced garlic in a ziploc bag. Squish to mix well. Add fish, seal and marinate in refrigerator for 2 hours.
- Remove fish from marinade, reserving marinade. Pat dry with a paper towel and apply a good layer of vegetable or olive oil to prevent sticking on the grill.
- Preheat grill so grill rack is screaming hot. Place fish over hot coals or gas accordingly 6 minutes on each side or until fish flakes easily when tested with a fork, basting frequently with marinade.
- Allow to rest a few minutes before serving.

- Rinse fish; pat dry with paper towels.
- Cut into serving size pieces.
- For marinade, in a shallow bowl combine the green onions, orange juice, chili sauce, basil, gingerroot, soy sauce, and chili oil.
- Add the fish; turn to coat with marinade.
- Cover; marinate at room temperature for 20 minutes.
- Spray the unheated rack of a broiler pan with nonstick coating.
- Drain fish, reserve marinade.
- Place fish on prepared rack.
- Broil 4 inches from the heat for 5 minutes.
- Using a wide spatula, carefully turn fish over.
- Brush with the reserved marinade.
- Broil for 5-7 minutes more or until fish flakes easily when tested with a fork.
BATTER FRIED SHARK (FROM STRICTLY BUSINESS FISHING CHARTERS)
This is a very light batter that could be used for any seafood. The recipe is from my brother-in-law's brothers' charter fishing business website. I tried it this week and it's my new seafood batter---can't wait to try it on onion rings!

- Slowly add 1 cup water and vinegar.
