MOZZARELLA CHICKEN
This is a great change from the usual chicken.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place chicken breasts between 2 sheets of wax paper. Pound each to 1/4 inch thickness. Spread butter/margarine over the inside, then add salt and pepper to taste.
- Place slice of cheese on breast, roll and close with toothpicks. Repeat with each breast. Dip rolled breasts in flour, then egg, then breadcrumbs. Place coated breasts in a lightly greased 9x13 inch baking dish.
- To Make Sauce: In a saucepan, melt 1/4 cup butter and add garlic. Add wine and simmer all together. Pour sauce over chicken and bake in the preheated oven for 30 to 45 minutes.

MOZZARELLA CHICKEN BAKE
I made this tonight, and it was so delicious. I finished it off in the oven just to make sure it was baked through. I served it with spaghetti and marinara sauce, salad and hard rolls. EVERYONE loved it, how often can you say that? AND it was quick. This one is a keeper.

Steps:
- Place chicken pieces in between wax paper and pound until thin, being careful not to tear chicken. Coat with flour. Heat butter in skillet; add chicken and cook until tender, about 5 minutes per side. Place chicken on broiler pan; sprinkle with salt and pepper. Quickly saute mushrooms in skillet; arrange slices on chicken. Top each breast with slice of cheese. Place under broiler just long enough to melt cheese. Makes 4 servings.

- Begin the recipe by preheating the oven to 375 degrees F. and season both sides of the 1 1/2 pounds chicken breasts with salt and pepper.
- Add the 2 tablespoons olive oil to a medium skillet, preferably one that can easily transfer to the oven to make this a one-pot meal. The skillet should be on medium-high heat.
