Steps:
- In a bowl, beat the eggs, and stir in the baby spinach and Parmesan cheese. Season with onion powder, nutmeg, salt, and pepper.
- In a small skillet coated with cooking spray over medium heat, cook the egg mixture about 3 minutes, until partially set. Flip with a spatula, and continue cooking 2 to 3 minutes. Reduce heat to low, and continue cooking 2 to 3 minutes, or to desired doneness.

- Melt butter.
- Cook in smaller saute pan with lid cause they want it to be tall.
- Add bell peppers; saute.
- Add mushrooms saute.
- Add eggs; stir once.
- Add spinach.
- Cover with lid ajar.
- Cook on low.
- Cook until semi solid (you dont have to do this step).
- Serve like pizza with rye toast.

Steps:
- Tip the spinach into a large colander and bring a kettleful of water to the boil.
- Slowly pour the water over the spinach until wilted, then cool under cold water. Squeeze all the water out.
- Heat grill/broiler to high.
- Heat the oil in a non-stick frying pan and gently cook the onion and potato for about 10 minutes until the potato is soft.
- While the onion is cooking, beat the eggs together in a large bowl and season with salt and pepper.
- Stir the spinach into the potatoes.
- Pour in the eggs and cook, stirring occasionally, until nearly set.
- Flash the omelette under the grill/broiler to set the top.
- Ease the omelette on to a plate, then flip over back into the pan.
- Finish cooking the omelette on the underside and turn out onto a board.
- Serve cut into wedges.

- Whip the eggs, mix in the Parmesan, chopped spinach and basil and season with salt and pepper. Heat the oil on a frying pan. Pour the egg mix on the pan and cook for a few minutes. Cover the pan with a plate and flip to transfer the omelet on the plate. Slip the omelet back on the pan to cook for a few minutes from the other side. Sprinkle some grated Parmesan on top and serve immediately.
- Alternative cooking, factory style: Pour everything in an oven dish and cook in a preheated oven at 150C for 5 minutes or until the egg is cooked.
- For a heavier meal, mix in some fried bacon or ham cubes.

I make this on Saturday mornings and it is so easy, but tastes so great! Don't be afraid of the cottage cheese, it makes the eggs creamy and delicious. It's pretty enough to serve to guests!

- Beat the eggs until frothy.
- Add the salt, pepper, and cajun seasoning.
- Stir in the cottage cheese.
- Heat a medium skillet on medium-high and add the olive oil, making sure to coat bottom of skillet.
- Add egg mixture and stir as if making scrambled eggs.
- When eggs are half cooked, add fresh spinach,reduce heat, and cover.
- When spinach is wilted (about 3 minutes) turn off heat and sprinkle with cheese.
- Cover for about 2 more minutes, then serve.
- You can also add chopped tomatoes to this recipe. Just be sure they are well drained (I use paper towels). Add them when you add the spinach.
BRANDI'S YUMMY SPINACH OMELET
I was experimenting with ingredients I had leftover from making spinach quiche and decided to try making a yummy omelet with some of them. I love pepper so I chose to increase the amount of it in my omelet. I also used frozen spinach. There's no need to thaw it. I used a knife to shave off what I needed. Cheese is optional because this omelet has great flavor without it and is much healthier. If you decide to add cheese I recommend Laughing Cow brand Creamy Swiss.

- In a blender or by hand, combine eggs, spinach, salt, pepper and nutmeg.
- Blend until thoroughly mixed.
- In a small frying pan heat olive oil.
- When oil is hot pour egg mixture into pan and cook as you would normally cook any omelet.
- When eggs are throughly cooked in omelet form, add cheese to half of omelet and fold.

- Chiffonade (Roll and cut into tiny ribbons) basil and spinach. Crack eggs into a mixing bowl, add milk, salt, pepper, basil and 3/4 of the spinach. Reserve remaining spinach. Beat egg mixture with a fork or wire whisk until smooth and a bit frothy.
- Melt butter over medium low heat in a nonstick or other omelet-friendly skillet. Pour egg mixture into pan, shake skillet gently to ensure even coverage. When eggs turn white on the bottom, pull edges away from skillet gently toward center of pan to allow liquid egg mixture to flow to cooking surface.
