FLUFFY BISCUIT MUFFINS
THESE BISCUITS are simple to make and have a wonderful aroma when baking! This particular recipe is one of my husband's favorites - and biscuits were a steady diet in the Southern household where he grew up. The muffin shape makes them a bit different. -Virginia Foster, Paducah, Kentucky

- Preheat oven to 425°. In a bowl, cut flour and mayonnaise together until mixture resembles coarse crumbs. Add milk; stir just until mixed. Spoon into four greased muffin cups. Bake 14-16 minutes or until lightly browned.

- Preheat oven to 350°. Whisk together first 4 ingredients. In another bowl, whisk milk and mayonnaise until blended; add to dry ingredients, stirring just until moistened (batter will be thick)., Spoon 1/4 cup mixture into each of 12 greased or paper-lined muffin cups. Bake until golden brown, 25-30 minutes. Cool 5 minutes before removing from pan to a wire rack. Serve warm.

- Preheat the oven to 400 degrees F.
- In an electric mixer, cream the margarine and sour cream. Add the flour and mix well. Drop large spoonfuls of the dough into a muffin pan that has been sprayed with cooking spray or lined with muffin cups. Bake for until the tops of the muffins are golden brown, 15 to 20 minutes.
MUFFIN-TIN CHICKEN ALFREDO BISCUIT BOMBS
These biscuit bombs are stuffed with a cheesy chicken Alfredo and broccoli mixture and coated in bread crumbs and Parmesan for a delicious, dippable dinner or appetizer.

- Heat oven to 375°F. Generously spray 16 regular-size muffin cups with cooking spray.
- In medium bowl, mix chicken, broccoli and 1/2 cup of the Alfredo sauce. Separate dough into 8 biscuits. Separate each biscuit into 2 layers. Press each biscuit into 3 1/2-inch round.
- Place a heaping tablespoon of the chicken mixture and 1 mozzarella cube in center of each dough round. Gently stretch dough up and around chicken mixture and cheese, bringing to top, and pinching firmly to seal. (Biscuits will be full.)
- In small microwavable bowl, microwave butter uncovered on High 20 to 30 seconds or until melted. Stir in bread crumbs, Parmesan cheese and garlic powder; mix well. Roll each biscuit in mixture, lightly pressing mixture into dough, and place pinched side down in muffin cup. With sharp knife, poke top of each biscuit two times to vent. Bake 19 to 24 minutes or until golden brown and biscuits are no longer doughy in center.
- In small microwavable bowl, add remaining pasta sauce. Cover; microwave on High 60 to 90 seconds, stirring halfway through, until heated through. Serve warm biscuits with warm sauce for dipping. Garnish with parsley.

- Preheat oven to 400 degrees.
- Grease one 12-cup muffin pan (2&1/2-inch size).
- In large bowl combine flour, sugar and baking powder.
- Cut butter into thin slices and add to dry mixture.
- Using a pastry cutter or low speed of your mixer, combine the butter with the dry mixture until it resembles coarse crumbs.
- Stir in milk, with a spoon or fork.
- Stirring only until flour mixture is moistened.
- Batter will be thick and lumpy.
- Spoon into muffin cups, dividing evenly between all 12 cups.
- Bake for 20 minutes or until tops are golden brown.
- When done, remove from muffin pan immediately.
