Steps:

  • In a large skillet heat the oil. When almost smoking, add the onions and garlic over medium-low heat until the onions have wilted, about 8 minutes. Add the mushrooms and season with salt and pepper. Raise heat to high and saute until mushrooms are tender and all the liquid has evaporated. Remove pan from heat and pour in Marsala. Return pan to stove and allow wine to evaporate, about 3 minutes. Add chicken broth and simmer for 1/2 hour until the sauce has reduced by half. Add heavy cream and mix well. Take the pan off the heat and add the fresh herbs and Parmesan and mix thoroughly.

1/4 cup extra-virgin olive oil
1 large onion, chopped
2 garlic cloves, minced
1 pound mixed mushrooms (cremini, oyster, shiitake) chopped
Salt and freshly ground black pepper
1/2 cup Marsala
2 cups chicken broth
1/3 cup heavy cream
5 fresh basil leaves, chopped
1/4 cup flat-leaf Italian parsley, chopped
1/2 to 3/4 cup grated Parmesan

GRANDMA'S BOLOGNESE

Two types of ground meat (beef and pork) are enriched with pancetta and cream in this old-school Italian sauce, while porcini mushrooms and Marsala add wonderful depth of flavor. Make pasta night extra special by serving atop fresh pappardelle.

Grandma's Bolognese image

Steps:

  • Soak mushrooms in warm water 30 minutes; drain, reserving liquid. Chop mushrooms (you should have 1/3 cup). Melt butter in a Dutch oven or a large, heavy straight-sided skillet over medium-high heat. Add pancetta; cook, stirring, until browned and crisp, about 1 minute. Add onion, carrot, celery, and garlic. Season with 1 teaspoon salt and 1/2 teaspoon pepper; cook, stirring occasionally, until vegetables are softened and beginning to brown, about 6 minutes. Transfer to a bowl.
  • Add 2 tablespoons oil to Dutch oven; heat until shimmering. Add both meats, increase heat to high, and cook, stirring occasionally, until browned, 3 to 4 minutes. Return vegetables to Dutch oven with marjoram, nutmeg, parsley, and basil. Add Marsala and bring to a boil; cook, scraping up browned bits, until liquid has almost evaporated, about 1 minute. Add 1/2 cup mushroom liquid and mushrooms, broth, and tomatoes. Bring to a boil, then reduce heat to low, cover, and simmer, stirring occasionally, 1 hour. Stir in cream and cook, uncovered, stirring occasionally, until reduced and thickened, 20 to 25 minutes more.
  • Meanwhile, bring a large pot of salted water to a boil. Add pasta to boiling water and cook until floating and tender, about 1 minute. Reserve 1 cup pasta water, then drain. Transfer pasta to skillet with sauce. Add 1/2 cup pasta water; toss to combine and finish cooking, about 30 seconds. Remove from heat; add cheese and remaining 1/4 cup oil. Serve with more cheese, oil, pepper, and basil leaves, if desired.

1/2 ounce dried porcini mushrooms
3/4 cup warm water
2 tablespoons unsalted butter
1 ounce pancetta or prosciutto, cut into 1/4-inch pieces (1/4 cup)
1 small onion, minced (1 cup)
1 small carrot, finely chopped
1 celery stalk, finely chopped
2 large cloves garlic, minced (4 teaspoons)

1 cup low-sodium chicken broth
1 can (28 ounces) whole peeled tomatoes, drained and chopped (2 cups)
1/4 cup heavy cream
Fresh Pappardelle
1 cup freshly grated Parmigiano-Reggiano, plus more for serving

A vegetarian 30 Minute Meal Rachael Ray recipe (from her Feb 2009 magazine) placed here for safe keeping. This is supposed to be a main course, however it could be served as a side dish to meat/fish. NOTE: I made this dish as Rachael wrote it and it proved to be quite bland and soupy. . .that being said, I revised the recipe below to make it fabulous. Try it!

Mushroom Marsala Pappardelle image

Steps:

  • Bring a large pot of water to a boil, salt it, add the pasta and cook until al dente. Drain.
  • While the pasta is working, in a large, deep skillet, heat the EVOO, 2 turns of the pan, over medium-high heat. Add the onions and mushrooms and cook until everything is softened, about 6-8 minutes.
  • Add the garlic, season with salt and pepper and cook for 3 minutes.
  • Stir in the marsala and cook until nearly absorbed completely by the mushrooms, about 2 minutes.
  • Stir in the vegetable broth; remove a little of the broth and mix it with the corn starch until creamy. Add the corn starch mixture. Once the sauce starts to thicken, add in the cream and spices; add salt and pepper to taste.
  • Remove the sauce from the heat and stir in the butter until melted, add the parsley (if using) and toss.
  • Add the pasta to the sauce and toss to coat.
  • Top with the cheese and spinach (if using).

2 tablespoons extra virgin olive oil (EVOO)
2 lbs cremini mushrooms, sliced (I used a mix of different mushrooms)
4 garlic cloves, grated
1/2 onion, chopped
1/2 cup marsala wine
1 cup vegetable broth (may sub chicken broth)
1/2 tablespoon cornstarch
1/4 cup heavy cream
1 teaspoon all purpose Greek seasoning (may sub Italian Seasoning)
2 tablespoons butter
2/3 cup chopped flat leaf parsley (optional)
4 tablespoons grated parmigiano-reggiano cheese
2 cups fresh Baby Spinach, coarsely chopped (optional)

Pappardelle is my favorite kind of pasta. This is a quick and flavorful recipe. I use all kinds of mushrooms including dry ones.

Pappardelle With Mushroom Sauce image

Steps:

  • Wash and dry mushrooms thoroughly and slice thin.
  • Heat olive oil in a large skillet.
  • Add garlic and sauté over medium heat about 1 minute.
  • When garlic begins to color, add sliced mushrooms.
  • Sauté mushrooms over high heat until lightly colored.
  • Add wine.
  • Cook until wine is reduced by half, stirring constantly.
  • Add parsley and cook 1 minute longer.
  • Season with salt and pepper.
  • Fill a very large saucepan two-thirds full with salted water.
  • Bring water to a boil.
  • Add pasta.
  • Bring water back to a boil and cook pasta uncovered until 'al dente'.
  • Drain pasta and place in skillet with sauce; add butter.
  • Toss pasta, sauce and butter over medium heat until sauce coats pasta, 20 to 30 seconds.
  • Serve immediately.

  • Bring a large stock pot of water to a boil then generously salt with kosher salt. Add pappardelle pasta and cook until al dente then drain, reserving 1/2 cup pasta sauce.
  • While pasta is cooking begin cooking the sauce. In a 10-inch skillet over medium-high, heat olive oil and then add red bell pepper slices and onion and cook for 4-5 minutes or until onion softens, stirring occasionally. Season with kosher salt, add mushrooms and cook for another 3 minutes. Add garlic, turkey sausage and red pepper flakes and cook until turkey is warmed through, about 3 minutes.
  • Add cream, marsala, tomatoes and rosemary to skillet and cook for about 3 minutes or until sauce thickens and tomatoes soften. Gently fold in pasta to skillet until coated. If you'd like more sauce, add reserved pasta water one tablespoon at a time or another pour or two of cream if you want a heavier sauce. Garnish with parmesan, kosher salt and more rosemary if desired. Serve immediately.
