STILTON AND GARLIC MUSHROOMS

Mushrooms in a creamy stilton and garlic sauce.

Steps:

  • Preheat the oven to 190c/gas 5.
  • Fry mushrooms and garlic in the butter, stirring until beginning to soften.
  • Gradually add the cream and boil gently for 2-4 mins until starting to thicken.
  • Season with salt & pepper to taste, and divide the mixture between two individually sized ovenproof dishes.
  • Crumble stilton over the top of each dish, and place in the oven for approx 10-15 mins until the stillton is melted and bubbling.
  • Serve with chunks of crusty bread.

Broccoli & stilton soup image

Steps:

  • Heat 2 tbsp rapeseed oil in a large saucepan and then add 1 finely chopped onion. Cook on a medium heat until soft. Add a splash of water if the onion starts to catch.
  • Add 1 sliced celery stick, 1 sliced leek, 1 diced medium potato and a knob of butter. Stir until melted, then cover with a lid. Allow to sweat for 5 minutes then remove the lid.
  • Pour in 1l of chicken or vegetable stock and add any chunky bits of stalk from 1 head of broccoli. Cook for 10-15 minutes until all the vegetables are soft.
  • Add the rest of the roughly chopped broccoli and cook for a further 5 minutes.
  • Carefully transfer to a blender and blitz until smooth.
  • Stir in 140g crumbled stilton, allowing a few lumps to remain. Season with black pepper and serve.

  • Combine pears, squash, tomatoes, leek, garlic, oil, 1/4 teaspoon salt and pepper in a large bowl; toss to coat. Spread evenly on a large rimmed baking sheet. Roast, stirring occasionally, until the vegetables are tender, 40 to 55 minutes. Let cool slightly.
  • Place half the vegetables and 2 cups broth in a blender; puree until smooth. Transfer to a large saucepan. Puree the remaining vegetables and 2 cups broth. Add to the pan and stir in the remaining 1/4 teaspoon salt.
  • Cook the soup over medium-low heat, stirring, until hot, about 10 minutes. Divide among 6 bowls and garnish with cheese and chives (or scallion greens).
