HOT ROLLS
These rolls are just wonderful and so simple to make. Prep time does not include the time for letting rolls rise.[Update: After finally being successful in making bread over the past year, and because of the reviews, I have reworked this recipe and hoepfully the instructions are more clear. The dough should be slightly sticky]

Steps:
- Let milk come to a boil in a heavy saucepan. Add 1/4 cup butter, 1/4 cup sugar, and salt. Cool. Soften yeast in warm water. Stir into milk mixture. Pour into large mixing bowl. Add flour, a little at a time, to liquid mixture. Beat well. Turn out onto floured board. Allow to sit 15 minutes. Knead until smooth and satiny.
- Place dough into a greased bowl. Turn over once. Cover with a cloth. Let rise in a warm place until doubled in size. Roll out dough on floured board to about 1/4-inch thickness. Cut into three 8-inch squares (they don't have to be perfect squares). Work with 1 square at a time. Brush each square with melted butter.
- Mix 1 cup sugar with cinnamon (if necessary, you may have to make more sugar/cinnamon mixture.) Sprinkle most of this mixture generously over entire surface of each square. Starting at one side of each square, roll into a tube. Continue rolling back and forth, until 12 to 18 inches long. Repeat with other 2 squares. Cut each tube into wheels about 1/2-inch wide. Place wheels onto a baking sheet that has been brushed with melted butter and sprinkled well with cinnamon-sugar mixture. Place them so that they touch. Brush tops with melted butter and sprinkle with more cinnamon-sugar mixture. Let stand, covered, at room temperature for 1 hour to rise again.
- Preheat oven to 350 degrees. Bake rolls for 18 to 20 minutes. (You can refrigerate rolls, covered, and then bring back to room temperature for 30 minutes before baking.).

MOM'S HOT ROLLS
This old family recipe is the best of the best. Plus you can make the dough up ahead of time, keeping refrigerated until needed. That lets you have delicious old-fashioned yeast rolls or cinnamon rolls on the table in half the time. (I have modified the directions to be more clear about how much flour to use.)

RUBY'S CHEESE TIDBITS
This is another of my Aunt Ruby's recipes. One of my absolute favorites !!! Just a note, originally the amount of cheese was incorrect. Instead of 1/2 cup it should have said 1 and 1/2 cups.

Steps:
- Combine milk, margarine, sugar, salt, potatoes, let cool and add yeast, then eggs. Add flour a cup at atime for easy mixing. Mix with hands or big heavy duty spoon till there are no lumps and the dough is pliable but not too flimsy. Cover the dough ball with oil (about a spoon full) like you would a pizza dough and let set 1 hour or until almost doubled in size. Knead for a few minutes, Sprinkle flour on your rolling out surface and roll out about ½ inch thick and cut with jar lid or biscuit cutter. Melt a little margarine and dab the tops lightly and let raise for about 3 hours. Bake at 350-375 for 16-20 minutes or until they are browned. You can also leave in the fridge overnight and roll out the next day.
