GRANDMA'S EASY POTATO ROLLS

These fluffy rolls (King Arthur Baking) are easy to mix up in a jiffy, since they take potato flour instead of mashed potatoes (potato flakes can be substituted). I mix them in my bread machine and the dough is silky and easy to shape. They turn out "picture perfect." They work out perfectly if you shape into 16 balls and put in 2 round pans (8 each).

Grandma's Easy Potato Rolls image

Steps:

  • Mix and knead together all ingredients in bread machine (or in mixer).
  • If mixing by hand, let dough rise about 90 minutes (or follow your bread machine's dough cycle).
  • Your dough might not have risen exactly double.
  • Transfer the dough to a lightly greased work surface and divide it into 16 pieces.
  • Round each piece into a smooth ball.
  • Place the balls in a 9x 13 pan, or 2 9 inch round pans, or separately on cookie sheet.
  • Cover the pan and let the rolls rise for about 1 hour or until doubled in bulk.
  • Preheat the oven to 325.
  • Bake the rolls for 30 minutes (tenting lightly with aluminum foil after 20 minutes to prevent overbrowning).
  • Rolls should be golden brown when done. Brush with additional melted butter.
  • Let cool slightly and turn out on a rack to cool.

1 tablespoon instant yeast
1/2 cup milk
6 tablespoons butter
1/4 cup water
1 teaspoon salt
3 cups unbleached all-purpose flour (I use bleached)
1/4 cup potato flour (on baking aisle with specialty flours)
1/3 cup sugar
2 eggs

MY GRANDMA'S POTATO ROLLS OR POTATO BREAD (FOR BREAD MACHINE)

This is my Grandma's recipe and it is DELISH! I am not sure where she got it from, but these rolls have been a tradition in our family for as long as I can remember. This recipe uses REAL mashed potatoes (not instant flakes). So, when you plan to make this be sure to reserve 1/2 to 1 c. of the mashed potatoes you served at dinner the night before!! Today I was hungry for these rolls but didn't feel like rolling out dough, so I attempted to make the recipe (cut in half) in my bread machine to make a loaf of bread instead....PERFECT results! I have listed the ingredients the way my bread machine lists them, but do be sure to check manufacturer's instructions on the correct order of ingredients for your specific machine. I hope everyone enjoys this as much as our family does. Below are both the rolls and the bread machine versions of this recipe.

My Grandma's Potato Rolls or Potato Bread (For Bread Machine) image

Steps:

  • If making POTATO ROLLS: Preheat oven to 350°F.
  • In a large mixing bowl, dissolve yeast in 1 cup warm water. Allow the yeast to activate and then mix in sugar or honey.
  • Add mashed potatoes, vegetable oil, eggs and salt. Use mixer or bread hooks.
  • Add flour one cup at a time stopping at 5 1/2 cups. Slowly add remaining flour until the dough is only slightly sticky to the touch. The dough should be workable but not dry.
  • Place in a greased bowl and cover with a towel. Allow to rise in a warm place until doubled in size, or it can sit overnight at room temperature.
  • Punch down and then roll dough out on floured surface to 1/2" thickness.
  • Use a canning jar ring to cut rolls - should make 30-36 rolls.
  • Place on a greased pan and allow to rise till almost doubled.
  • Bake in a preheated 350°F oven 12-15 minutes or until lightly browned.
  • If desired, slather outside tops with butter while still warm.
  • Enjoy!
  • NOTE: Prep time does not include rise times as they will vary.
  • If making POTATO BREAD: Place into bread pan in order as listed above OR as per manufacturer's guidelines.
  • Set for 1 1/2 lb. bread loaf and start bread machine.
  • Walk away until you hear the "ding" of the bread machine - approximately 3 hours later.
  • Remove from pan and slather outside of the loaf with butter while still warm from machine.
  • Enjoy!

6 cups bread flour
1 teaspoon salt

1/2 cup honey (do NOT add honey if planning to use sugar. Honey is listed here because it should be added with liqu)

POTATO BUNS (BREAD MACHINE)

This is a simple potato bread recipe, mixed in a bread machine, that makes one dozen hot dog or hamburger buns, or could be used for rolls. The crust bakes very light brown, and the bread has a very smooth texture inside. These are egg-, milk-, and soy-free, which is nearly impossible to find in store-bought buns. These freeze very well for later use, and pre-sliced frozen buns defrost easily in a toaster or microwave. Preparation time assumes 5 minute ingredient assembly, 50 minute single-rise dough cycle, 5 minute dough shaping, and 15 minute rise.

Potato Buns (Bread Machine) image

Steps:

  • Add the ingredients in order to bread machine pan.
  • Set on dough setting.
  • After first rise, remove dough (do not let it rise a second time in the machine!).
  • Divide dough into 12 equal parts (or more, depending on the size bun you need).
  • To shape hot dog buns: roll dough between hands until roughly the diameter and length of a hot dog.
  • To shape hamburger buns: flatten dough ball into roughly the shape of a hamburger.
  • Place shaped dough on a large baking sheet that has been covered with parchment paper. This makes for very easy removal and clean up!
  • Preheat oven to 375°F.
  • Allow dough to rise for 15 minutes while oven preheats.
  • Bake buns for 15-20 minutes, or until tops turn light golden brown.
  • Allow buns to cool slightly before slicing.
  • Buns may be frozen.
  • To defrost, toast in a bagel-friendly toaster or microwave for approximately 20 seconds.

POTATO BREAD (BREAD MACHINE)

This is a light and delicious loaf of bread made with instant mashed potato flakes. It was my first truly successful attempt at using my new bread machine, and I plan on making it again and again! If I didn't screw it up it must be foolproof! I found this online somewhere, but I'm ashamed to say I forgot where. This makes one 1 1/2 pound loaf.

Old Fashioned Potato Bread (Bread Machine) image

Steps:

  • 1. Combine potato and water in a small saucepan. Simmer, covered, until the potato is tender, abut 10 minutes;slip off the peels. Mash or puree the potatoe with its water (do not drain; you want the water). Pour the potato-water mixture into a 2 cup glass measuring cup and add additional water to make 1 2/3 cups. Cool to room temperature.
  • 2. Place all the ingredients in order specified by the manufacturer of your machine; adding the potato mixture with the liquid ingredients. Set crust to medium and program for the Basic cycle. This recipe will not work with the Delay Timer function. Immediately remove bread from the bread pan and place it on a rack. Let cool to room temperature before slicing. Yeild 1 (2 lb) loaf.
