Steps:
- Combine the romaine, tomatoes, cucumber and onions in a large bowl.
- Whisk the olive oil, vinegar, sour cream, oregano and garlic in a small bowl to make the vinaigrette.
- Pour the vinaigrette over the salad, season with salt and pepper and toss to combine. Serve with more freshly cracked black pepper over the top.

MY MOM'S SALAD DRESSING
I grew up in the south, and this is the only dressing I knew existed until I was grown. I eat others now, but I still use this one a lot. It's sweet-tart, creamy. Very good.

MOM'S DRESSING
Steps:
- Preheat oven to 350 degrees F.
- In a medium-sized saute pan, heat the oil over medium heat. Add the onion, celery, and apple and saute until just tender. Remove from the heat and add the onion mixture to the bread in a large mixing bowl. In a medium mixing bowl, beat the eggs with the milk, sage, salt, and pepper. Pour over the bread mixture and stir to combine and moisten the bread. Transfer to a casserole dish and bake for about 1 hour or until browned on top. Serve.
MY MOM'S GOOD OLD POTATO SALAD
I have enjoyed this recipe for years, and now so do my children. The secret to this recipe is the sweet pickles. You can also trade the mayo for salad dressing.

- Place the potatoes in a large pan of water and boil over medium-low heat until tender, about 12 minutes. Drain the potatoes, and place in the refrigerator to cool.
- Place the eggs in a saucepan of cold water over medium heat, and bring to a full boil. Turn off the heat, cover the pan, and allow the eggs to sit in the hot water for about 15 minutes. Cool the eggs thoroughly under cold running water and shell them. Chop the cooled eggs and place them in a large salad bowl.
- Stir the onion, sweet pickles, and mayonnaise into the eggs, and let the mixture chill in the refrigerator at least l/2 hour to blend the flavors. Mix in the chilled chopped potatoes, and refrigerate for at least 1/2 hour. Serve cold.

WARNING: This salad dressing might not fit your tastes. Proceed with caution! :) My brother and I had one choice of dressing for our salads growing up...Mom's. I've tried for years to get her to give up the recipe but all she would say is "Sissy, I don't measure. You have to make this one from your memories." This is my attempt to create the dressing I grew up with and loved! It's not for everyone but it sure is a hit in our family. (My brother pretty much refuses to eat any salad without it.) Thanks Mom!

- Creamy Italian: Blend 1/4 cup mayonnaise, 2 tablespoons red wine vinegar, 2 tablespoon each sour cream and olive oil, 1 teaspoon Italian seasoning, 1 clove garlic, and 1/4 teaspoon kosher salt in a blender. Stir in 1 tablespoon chopped parsley.
- Classic Vinaigrette: Whisk 2 tablespoons red wine vinegar, 2 teaspoons Dijon mustard, 1/2 teaspoon kosher salt, and pepper to taste. Gradually whisk in 1/3 cup olive oil.
- Roasted Garlic: Slice the top off 1 head garlic; drizzle with olive oil, wrap in aluminum foil and roast at 400 degree until tender, about 35 minutes. Cool and then squeeze out the cloves. I’m obsessed with this one. SO good! Make a double batch and use part of it for a marinade for chicken breast. It’s also amazing on roasted vegetables. I made my freezer to slow cooker Spaghetti and Meatballs and served it with a simple side salad and this dressing last night and I couldn’t get enough. Super easy, healthy, delicious, whole food meal the whole family loves.
