EASY MEATLOAF
This is a very easy and no fail recipe for meatloaf. It won't take long to make at all, and it's quite good!

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
- In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
- Bake at 350 degrees F (175 degrees C) for 1 hour.

- For the meatloaf: Preheat the oven to 350 degrees F.
- Pour the milk over the bread and allow it to soak in for several minutes. Place the ground beef, milk-soaked bread, Parmesan, salt, some pepper, seasoned salt and parsley in a large mixing bowl. Pour in the eggs. With clean hands, mix the ingredients until well combined.
- Form the mixture into a loaf shape on a foil-lined broiler pan, which will allow the fat from the meat to drain.
- Lay the bacon slices over the top, tucking them underneath the meatloaf to give the meatloaf some support.
- Next, make the tomato sauce: Pour the ketchup into a bowl. Add the brown sugar and dry mustard, and splash in the hot sauce and Worcestershire sauce. Stir the mixture until well combined. Pour one-third of the sauce over the top of the meatloaf.
- Bake for 45 minutes, and then pour over another one-third of the remaining tomato sauce over the meatloaf. Bake for an additional 20 to 25 minutes; the meatloaf should be no longer pink in the middle. Allow to sit 10 minutes before serving.
- Serve with the remaining tomato sauce on the side as a dipping sauce.
CLASSIC MEATLOAF

- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
- Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
- Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
- Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

- Preheat oven to 400 degrees. Line a baking sheet with aluminum foil or parchment paper. Place bread in food processor; pulse until fine crumbs form. Transfer to a small bowl; stir in milk. Set aside, about 10 minutes, stirring occasionally.
- Meanwhile, in a large bowl, combine beef, pork, onion, garlic, egg, 1/4 cup ketchup, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Add bread-milk mixture, and mix very gently with a fork (do not overmix).

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 1/2 x 4 1/2 inch loaf pan.
- Combine milk and soft bread crumbs in a small bowl and allow to soften, about 5 minutes.
- In a mixing bowl, combine the ground beef, salt, pepper, egg, 3 tablespoons steak sauce, chopped onion, and green bell pepper. Add bread crumb mixture, and mix with your hands until all ingredients are combined.
- Pat the the mixture into the prepared loaf pan. Brush the top with additional steak sauce.

- Preheat the oven to 325 degrees F.
- Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
- In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.
NEAT LOAF
This recipe originally comes from "Incredibly Delicious: Recipes for a New Paradigm" by Gentle World Publishing. It makes a really big, hearty loaf, which is wonderful for sharing or freezing. The millet lends it a nice, fluffy, satisfying texture. I like my loaf a little on the piquant side so I top it with a healthy dose of catsup, but you could use tomato paste as well.

- Saute the onions in a little oil. When soft and fragrant, remove from pan and put half of them aside. Put the rest in a large mixing bowl. Saute bell pepper and add to onions in bowl.
- In a food processor, grind the seitan using the "S" shaped blade, then grind the tempeh. Fry these together in a large skillet in a little oil and season with tamari and yeast, to taste. When browned, place this in the mixing bowl. Add the cooked millet.
- In the food processor, blend oil, remaining sauteed onion, black pepper, tofu, bouillin, and tomato paste. When thoroughly blended, stir this into the mixture in the large bowl. Add oregano, herb seasoning, cumin, and sea salt. Mix well.
- Place into a large oiled casserole or a large cast-iron skillet (a good way to get iron into your diet!). Spread the top of the loaf with a generous amount of catsup and sprinkle with a little oil.
- Bake in a pre-heated oven at 350 degrees for 50 minutes.

- Preheat oven to 350°F Lightly oil a loaf pan.
- Heat the olive oil in a skillet over medium heat. Cook the onion and carrot until just soft.
- In a separate bowl, crumble the vegetarian burgers. Add the walnuts, bread crumbs and the onion mixture. Lightly process the lentils in a food processor and add to bowl.
- In a food processor, process tofu, tahini, soy sauce and parsley until well blended. Stir into onion mixture. Season with salt and pepper.
- Place in the oiled pan.
- Make a topping for the loaf by stirring together the catsup, jam and soy sauce until well blended. Spread evenly over top of loaf.
- Bake for 45 minutes. After it comes out of the oven, let it rest for 10 minutes before slicing.
