SUMMER SALAD WITH BURRATA, TOMATOES, AND NECTARINES

I made this delicious salad for a potluck the other day and everyone loved it. You can use peaches instead of nectarines. Try to find ripe heirloom tomatoes for extra flavor.

Summer Salad with Burrata, Tomatoes, and Nectarines image

Steps:

  • Combine nectarines, tomatoes, burrata cheese, and basil in a bowl.
  • Stir together olive oil, vinegar, mustard, and honey. Season with salt and pepper. Drizzle dressing over salad.

2 large heirloom tomatoes, chopped
2 (4 ounce) balls Burrata cheese, cut into 3/4-inch pieces
2 tablespoons fresh basil, chopped, or to taste
5 tablespoons extra-virgin olive oil
3 tablespoons white wine vinegar
1 teaspoon Dijon mustard
½ teaspoon honey
salt and freshly ground black pepper to taste

Nectarine-Tomato Salad image

Steps:

  • Soak the red onion in a bowl of salted cold water, 10 to 15 minutes; drain, rinse and pat dry. Meanwhile, bring the vinegar and honey to a simmer in a small skillet over medium-high heat; cook until slightly syrupy, about 5 minutes. Let cool completely. (The syrup will thicken as it cools.) Transfer to a bowl and gradually whisk in the olive oil until emulsified.
  • Season the tomatoes with salt and pepper and arrange on a platter with the nectarines, arugula and onion. Top with the ricotta salata. Drizzle with the vinegar mixture and more olive oil; toss gently.

1/2 large red onion, thinly sliced

1 3/4 pounds heirloom tomatoes, thinly sliced

Heirloom Tomato Salad with Nectarines, Avocado, and Arugula image

Steps:

  • Whisk oil and vinegar together in a bowl.
  • Place the sliced tomatoes on a platter and drizzle with about half of the vinaigrette and sprinkle with a pinch of regular salt. Place half the arugula on top of the tomatoes, then add the nectarine and avocado slices. Add the balance of the arugula and gently toss ingredients with the balance of the vinaigrette. Sprinkle with flaky sea salt and more pepper.
