NO CHALLENGE CREAMY CHOPS

Variations on a basic pork chop recipe from Campbell's soups. Makes a nice plate of fork-tender pork chops with a tasty, creamy sauce. Quick, no-fuss, recipe.

No Challenge Creamy Chops image

Steps:

  • Preheat oven to 400 degrees F.
  • Heat oil in large skillet.
  • Add chops and brown both sides.
  • Season chops lightly with salt and pepper.
  • Mix soup, milk and salad dressing mix together (If using ranch dressing, use only 1/2 the pkg).
  • Place chops in single layer in large baking pan.
  • Pour soup mixture over top of chops.
  • Cover pan with foil.
  • Bake for 30 minutes.
  • Serve with rice.
  • (If using ranch dressing mix, you can add the rest of the pkg to the water when making the rice).

  • In a large non stick pan on medium-medium high heat, melt 2 tablespoons butter. Season pork chops with salt and pepper, then sear, 4-5 minutes on each side, until just cooked. Remove from the pan and set aside.
  • In the same skillet add 1 tablespoons butter. Add onion, garlic, peppers, paprika, red chili pepper flakes, salt and pepper. Saute for about five minutes, until onions and peppers are softened.
  • Reduce heat to medium low. Add cream to the skillet and stir until a creamy sauce forms. Add Parmesan, stir until melted into sauce. Taste sauce and adjust seasoning with salt and pepper if needed. Stir in basil, simmer until wilted, 1-2 minutes.

  • Take the pork chops out of the fridge 15-30 minutes prior to starting the recipe if possible. Season the pork generously with salt & pepper on both sides.
  • In a deep skillet, add the olive oil and 1 tablespoon of the butter over medium-high heat. Let the pan heat up for a few minutes, and once it's hot, cook the pork chops for 3-5 minutes/side or until golden (3 minutes for thinner chops and 5 minutes for pork chops up to 1" thick). Once the pork chops are done searing, transfer them to a plate.
  • Add the remaining butter and the garlic cloves to the skillet. Turn the heat down to medium (or medium-low if using cast iron). Cook it, stirring fairly often, for about 3 minutes or until the garlic has somewhat browned on the outside.
  • Push the garlic to one side of the pan and sprinkle the flour in (avoiding the garlic). Let it cook for around 30 seconds, and give it a stir so it's incorporated with the butter (we're making a quick roux).
