Steps:
- In a large bowl, whisk 3 cups flour, yeast and salt. Stir in water and enough remaining flour to form a moist, shaggy dough. Do not knead. Cover and let rise in a cool place until doubled, 7-8 hours., Preheat oven to 450°; place a Dutch oven with lid onto center rack and heat for at least 30 minutes. Once Dutch oven is heated, turn dough onto a generously floured surface. Using a metal scraper or spatula, quickly shape into a round loaf. Gently place on top of a piece of parchment., Using a sharp knife, make a slash (1/4 in. deep) across top of loaf. Using the parchment, immediately lower bread into heated Dutch oven. Cover; bake for 30 minutes. Uncover and bake until bread is deep golden brown and sounds hollow when tapped, 15-20 minutes longer, partially covering if browning too much. Remove loaf from pan and cool completely on wire rack.

ALMOST NO FAT BANANA BREAD
Another recipe I got from a message board I belong to. The person who posted it said that this bread is surprising moist and has a wonderful flavor. For a little variation, you can add nuts or raisins.

BANANA BREAD NO FAT LESS SUGAR
Tasty banana bread with no eggs or oil, using Splenda brown sugar blend and natural sugars from the banana. Remember to use ripened bananas for best results. Feel free to add chopped walnuts and/or dried cranberries for added texture. Orange zest with the cranberries adds great flavor. Enjoy!

NON-FAT BANANA BREAD
This is the best healthy banana bread ever. Wrap it in foil and eat the next day for the best results. You can replace the banana with shredded zucchini or carrots if banana isn't your favorite with equally good results. You can leave the wheat bran and wheat germ out without compromising the recipe as well, I just sneak in good stuff for my family. Enjoy!

- Preheat oven to 325 degrees Fahrenheit (165 degrees Celsius) and grease a 9×5-inch loaf pan.
- In a large bowl, beat the oil and honey together with a whisk. Add the eggs and beat well, then whisk in the mashed bananas and milk. (If your coconut oil solidifies on contact with cold ingredients, simply let the bowl rest in a warm place for a few minutes, like on top of your stove, or warm it for about 10 seconds in the microwave.)
- Add the baking soda, vanilla, salt and cinnamon, and whisk to blend. Lastly, switch to a big spoon and stir in the flour, just until combined. Some lumps are ok! If you’re adding any additional mix-ins, gently fold them in now.
- Pour the batter into your greased loaf pan and sprinkle lightly with cinnamon. If you’d like a pretty swirled effect, run the tip of a knife across the batter in a zig-zag pattern.
