OUTSTANDING NORTHERN ITALIAN LASAGNA
Northern Italian Lasagna is usually a bit different than the Sicilian Lasagna we are accustomed too. No Ricotta cheese in this Lasagna. White sauce is used in place of it, with plenty of Mozzarella. - 1. Heat oven to 350 degree's. Have your meat sauce made ,or make mine as follows. Cook the sausage, chicken, and onion separately, In a sauce pan mix wine,tomato paste,water together to combine. Add the rest of the ingredients. Add in the chicken and sausage. bring to a boil,and reduce to simmer for one hour uncovered.
- 2. Mix the Parmesan cheese,parsley,and Mozzarella together and set aside,
- 3. Make the white sauce. Melt butter in saucepan on stove on low. Add the flour and mix well. Add the milk and half and half and nutmeg. Stir constantly while cooking until sauce becomes thick like a heavy cream. Remove from heat.
- 4. In a 13x9 inch pan spread 1 cup of meat sauce on the bottom.
- 5. Top with as many Lasagna noodle that will fit. Usually 3-4 will do.. Spread half the White sauce over noodles. Put half the Mozzarella mixture on top of white sauce. Next layer Lasagna noodles, meat sauce, Mozzarella mixture. Next Lasagna, Meat sauce,White sauce,and top with Mozzarella mixture. mixture. Bake at 350 degree's for 45 minutes,or until done.

- In a sauce pot melt the butter and sauté the (vegetables ingredients from Butter and below only)until softened.
- Add cream and watch it does not boil over.
- Add cheese and spices until melted.
- once melted put in blender and lightly blend.
- Keep sauce warm.
- Heat olive oil and combine all vegetables (zucchini, mushrooms, pepper, leeks) and fry until softened.
- Add parsley and spinach until just lightly soft and then add ricotta.
- Add the sauce (not all, but enough to your liking) and blend.
- In a lasagna pan add a little sauce to bottom and start to stack lasagna with veggie sauce mixture with each layer. Also now add cheddar and mozzarella alternate until all pasta is finished top with the mixture and cheese and a little more sauce.
- Preheat oven to 375 and cover lasagna bake for 20 minutes and uncover and bake an additional 15 minutes.
- If your time is short you can substitute making the sauce with your favorite primavera packaged sauce mix.

- Preheat oven to 375 degrees F.
- Bechamel sauce:
- In a 2-quart pot, melt 5 tablespoons of butter over medium heat. When butter has completely melted, add the flour and whisk until smooth, about 2 minutes. Gradually add the milk, whisking constantly to prevent any lumps from forming. Continue to simmer and whisk over medium heat until the sauce is thick, smooth and creamy, about 10 minutes. The sauce should be thick enough to coat the back of wooden spoon. Remove from heat and add the nutmeg and tomato sauce. Stir until well combined and check for seasoning. Set aside and allow to cool completely.
- In a saute pan, heat extra-virgin olive oil. When almost smoking, add the ground beef and season with salt and pepper. Brown meat, breaking any large lumps, until it is no longer pink. Remove from heat and drain any excess fat. Set aside and allow to cool completely.
- In a medium sized bowl, thoroughly mix the ricotta and eggs. Season with salt and pepper. Set aside.
- Into the bottom of a 13 by 9-inch baking dish, spread 1/3 of the bechamel sauce. Arrange the pasta sheets side by side, covering the bottom of the baking dish. Evenly spread a layer of all the ricotta mixture and then a layer of all the spinach. Arrange another layer of pasta sheets and spread all the ground beef on top. Sprinkle 1/2 the mozzarella cheese on top of the beef. Spread another 1/3 of the bechamel sauce. Arrange the final layer of pasta sheets and top with remaining bechamel, mozzarella and Parmesan cheeses. Cut the remaining 2 tablespoons of butter into 1/4-inch cubes and top lasagna.
- Line a large baking sheet with aluminum foil. Place lasagna dish on top, cover and put on the middle rack of the oven and bake until top is bubbling, about 30 minutes. Remove cover and continue to bake for about 15 minutes.
- In a large casserole pot or Dutch over, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 5 to 10 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 to 10 minutes. Add tomatoes and bay leaves and simmer uncovered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.
- Add 1/2 the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
- If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.
NORTHERN ITALIAN STYLE LACTO-VEGETARIAN LASAGNA
Modified for the vegetarian from a tried and true Northern Italian Style Lasagna with Bologna Meat Sauce recipe my mother has used for years. (Original recipe this is based on can be found in the Better Homes and Gardens "Italian Cook Book", 3rd printing, 1984.)

- In a large saucepan (or Dutch oven) cook tofu until browned. Add undrained tomatoes, onion, carrot, celery, parsley, tomato paste, bullion granules, nutmeg, 1 teaspoon salt, 1 teaspoon pepper to tofu. Stir. Stir in wine and ¼ cup water. Bring to a boil; reduce heat. Boil gently, uncovered, for 45 to 60 minutes or until desired consistency, stirring occasionally. Remove from heat.
- Cook pasta in boiling water just until tender; drain. Rinse with cool water.
- Combine cheeses.
- For the sauce melt butter in saucepan. Stir in flour, pepper, nutmeg, and ½ teaspoon salt. Add milk; cook and stir until thick and bubbly (don't let burn!).
- Arrange a single layer of the pasta in the bottom of a greased 13"x9"x2" baking dish. Spread 1/3 white sauce over noodles. Spread 1/3 Tofu "meat" filling over white sauce. Spread 1/3 cheese over tofu. Repeat layers of pasta, sauce, tofu mix and cheese 2 more times.
- Cover with foil and bake at 350degrees for 40 to 50 minutes.
- Remove from over. Let stand 10 minutes.
- Serve.

- Preheat oven to 400 degrees F (200 degrees C). Spray a 1 1/2-quart casserole dish with cooking spray.
- Bring a large pot of lightly salted water to a boil. Cook lasagna in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 8 minutes. Drain.
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add spinach, cover, and steam until tender, 2 to 6 minutes. Drain spinach.
- Mix spinach, ricotta cheese, 1/2 cup mozzarella cheese, egg, nutmeg, basil, salt, and black pepper in a bowl until thoroughly combined.
- Spread 1/4 cup pasta sauce on the bottom of the prepared casserole dish; top with 3 lasagna noodles, 1/2 of the ricotta mixture, and 1/4 cup pasta sauce. Repeat layers of 3 more noodles, 1/2 cup ricotta mixture, and 1/4 cup pasta sauce. End with remaining 3 lasagna noodles and 1/4 cup pasta sauce. Sprinkle 1/2 cup mozzarella cheese and Parmesan cheese on top. Cover casserole with aluminum foil.
- Bake in the preheated oven for 25 minutes. Uncover casserole and continue baking until lasagna is bubbling and lightly browned, about 25 more minutes. Let lasagna stand 5 minutes before serving.

RICH VEGETARIAN LASAGNA
Compiled from a base lasagna recipe, with my own special touches added. This one is definitely worth the wait, and will feed you for a week!

- Preheat the oven to 180c.
- Chop tofu and marinate in vegetable stock for one hour.
- Saute onion and garlic in oil until clear.
- Add tomato paste and crushed tomatoes.
- Simmer for 35-45 minutes, stirring occasionally.
- Slice eggplant then sprinkle with salt, then leave them for 20 minutes. Rinse the salt off and pat the eggplant slices dry.
- Grill or fry the eggplant until tender.
- Chop the peppers, and mushrooms, then saute in a little oil until tender.
- Drain the tofu, then blend with spinach, pine nuts and basil in a food processor until creamy and smooth.
- Mix the peppers and mushrooms with half of the tomato sauce.
- In an oiled oblong baking tray, layer the lasagna sheets, followed by the tofu mixture, then the vegetable mixture, then the slices of eggplant, the tomato sauce and top with a handful of cheese. Repeat until all used up, then layer the final sheet of pasta on top, followed by anything leftover, and finally a layer of parmesan. Make sure that the lasagna sheets are completely covered with the tomato sauce or they will dry out during cooking.
- Bake for 40-45 minutes.

- Peel and finely chop the shallots. cut the taleggio cheese into cubes. Wash the radicchio and cut it into thin strips.
- In a frying pan or iron skillet, heat the extra virgin olive oil. Cook the peeled and finely chopped shallots until they start to soften. Add the radicchio and cook for 10-15 minutes over a very gentle heat. Season with salt and pepper. Remove from heat and allow to cool.
- Put the butter in a pan over a low heat, melt it, add the flour and mix until it forms a thick paste (roux). Then, remove it from the heat. At this point, slowly add the milk and stir continuously to dissolve the roux without making lumps. Put the pan on a moderate heat and keep stirring constantly until it starts to simmer and thicken.
- In a large bowl combine the radicchio, half the grated cheese and the béchamel sauce, mix well and, if necessary, add salt.
