BANANA OATMEAL COOKIES

To help interest my kids in cooking, I started with this recipe from my childhood. My mom made these oatmeal banana cookies when I was young. Now my children like them as much as I did, and we quadruple the recipe to serve our large family. Banana Oatmeal Cookies image

Steps:

  • Preheat oven to 375°. In a bowl, combine the first 6 ingredients; beat in butter until mixture resembles coarse crumbs. Add egg, bananas and oats; mix well. Stir in chips and nuts. , Drop by tablespoonfuls onto greased baking sheets. Bake until golden brown, 13-15 minutes. Cool on wire racks.

1-1/2 cups all-purpose flour
1 cup sugar
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon

I love this recipe! I've been making it forever and finally have taken time to post it. It's nice to have another option for using up those over-ripe bananas. If I don't have time to actually make the cookies, I'll mash the bananas up in a tupperware and throw them in the freezer for later. ** Updated to be a vegan recipe. Also, I'd recommend replacing the cloves with cardamom for a twist on the original recipe! (3 July 09) **

  • In a large bowl, mix agave nectar, applesauce, and vanilla.
  • Stir in flour, baking soda, and spices.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). In the microwave or over a double boiler, melt unsweetened chocolate and butter together, stirring occasionally until smooth. Sift together flour, baking soda, baking powder, and salt; set aside.
  • In a medium bowl, beat sugar, eggs, and vanilla until light. Mix in the chocolate mixture until well blended. Stir in the sifted ingredients alternately with sour cream, then mix in chocolate chips. Drop by rounded tablespoonfuls onto ungreased cookie sheets.

Steps:

  • Preheat oven 350 degrees F. Line 2 cookie sheets with parchment paper.
  • In a medium bowl, mix together the oats, flour, baking soda, coconut, cinnamon and chips.
  • In a small bowl, whisk together yogurt, agave nectar, applesauce, and vanilla extract.
  • Make a well in the center of the dry mixture and pour in the wet mixture. Fold in just until mixed, do not over mix.
  • Take a small 1-inch ice cream scoop or a teaspoon and drop the balls on a cookie sheet about 1-inch apart. Flatten the balls with the back of a fork. Bake for 10 minutes or till the tops are lightly brown.
  • Remove from oven and let cool for 1 minute and transfer to cooling rack. Makes 20 cookies.
