NUTTY BANANA CHOCOLATE CHIP BREAD

This tasty recipe is deliciously moist and sweet while still including plenty of whole grains and healthy ingredients.

Nutty Banana Chocolate Chip Bread image

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5-inch loaf pan.
  • Mix all-purpose flour, whole wheat flour, flax seed, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg in a bowl. Beat butter, brown sugar, and sucralose sweetener in another bowl until light and fluffy. Beat eggs, vanilla extract, and lemon juice into butter mixture until well combined.
  • Stir flour mixture into butter mixture until smooth. Add yogurt, bananas, 1/2 cup walnuts, and 1/2 cup chocolate chips, stirring until batter is just blended. Pour batter into prepared loaf pan. Sprinkle remaining 1 tablespoon walnuts and 1 tablespoon chocolate chips on top of batter.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 70 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

Nutty Banana Chocolate Chip Bars image

Steps:

  • Heat oven to 350°F. Spray 9-inch square pan with cooking spray.
  • In medium bowl, beat banana with electric mixer on medium speed until pureed. Add Bisquick mix, protein powder, egg and syrup; beat until well combined. Stir in chocolate chips and half of the pecan chips. Spread in pan. Sprinkle with remaining pecan chips.
  • Bake 18 to 25 minutes or just until center is set. Cool completely in pan on cooling rack, at least 30 minutes. Cut into 3 rows by 3 rows. Remove bars to cooling rack or plate.
  • Spoon frosting into small resealable freezer plastic bag; microwave on High 10 to 15 seconds. Cut off tiny corner of bag; squeeze bag to drizzle frosting over bars. Gently press 2 dried banana chips on top of each bar.

Chocolate Marbled Banana Nut Bars image

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 9-inch square pan with cooking spray. In large bowl, stir cookie mix, 1/2 cup butter and egg until soft dough forms. Reserve 1 cup of the dough. To the remaining dough, add mashed banana and walnuts; mix well. Spread in bottom of pan.
  • In medium microwaveable bowl, microwave 3/4 cup of the chocolate chips with the remaining 2 tablespoons butter on High about 1 minute, stirring after 30 seconds, until melted and smooth. Add reserved cookie dough; stir until well blended. Drop chocolate dough by spoonfuls evenly over top of banana mixture; spread gently to almost cover. Swirl chocolate mixture into banana mixture with knife for marbled design.
  • Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes.
  • In small microwavable bowl, microwave remaining 1/2 cup chocolate chips on High about 1 minute, stirring after 30 seconds, until melted and smooth. Drizzle over bars. Cool completely, about 2 hours. For bars, cut into 5 rows by 4 rows. Store covered at room temperature.

Chocolate Chip Banana Nut Bread image

Steps:

  • Hand mix flour, baking powder, baking soda, sugar, walnuts, chocolate chips, and vanilla extract in mixing bowl until chocolate chips and walnuts are evenly spread out throughout mixture.
  • In another bowl, mash bananas and add to the main mixing bowl.
  • Soften the butter (I microwave for 20 seconds) and add to the main mixing bowl.
  • Add two whole eggs to main mixing bowl.
  • Mix all ingredients together by hand until it has a batter-like consistency.
  • Pour into greased loaf pan.
  • Let mixture set for at least 20 minutes before baking (Preheat the oven to 325°F).
  • Bake at 325°F for 65 minutes (may take longer depending on the oven and altitude).
  • When finished baking, it is best to let it set overnight before serving.

  • An optional recipe: Instead of the chocolate chips, use 1 1/2 tsp of cinnamon to make Cinnamon Banana Nut Bread.

  • Preheat oven to 350°F Butter and flour 15x10x1-inch baking sheet. Blend first 4 ingredients in medium bowl. Beat butter in large bowl until fluffy. Add both sugars and beat until well blended.
